Finally passed this after dying 30 times, what got me was the timing and not anticipating on when to dodge when he's charging at me from the air. Took me three times to time it just right cause he does take a bit of time to actually move the boat a bit. So thank you... Now I can continue on my hardcore playthrough

Hold move left on whatever platform you're playing on while shooting. When he does this kind of jump let go of aim immediately while still holding move left. Leon will move the boat out of the way and dodge the attack.

Yeah, this is either assisted or standard. Hardcore and Pro take way more hits to kill it.
