Hey everyone! Today, I’m sharing my mouthwatering recipe for Fire Roasted Smokehouse Salsa that’s sure to become your new favorite condiment. Made with fresh heirloom tomatoes, sweet onions, garlic, poblano peppers, jalapeños, and a special addition - Hatch green chilies - this salsa packs a flavor punch like no other.
Here’s what you’ll need:
• 3 medium heirloom tomatoes
• 1/2 large sweet onion
• 2 cloves of garlic
• 2 poblano peppers
• 1 jalapeño pepper
• 2 Hatch green chilies
• 1 chipotle pepper in adobo sauce
• 2 tablespoons fresh cilantro, finely chopped
• Juice of 1 lime
• 1 tablespoon high-quality aged tequila
• 1/2 tablespoon high-quality balsamic vinegar
• 1/2 teaspoon smoked paprika
• 1/2 teaspoon ground cumin
• Salt to taste
Instructions:
1. Preheat your grill to high heat, around 400°F (200°C).
2. Place the tomatoes, onion (peeled and halved), garlic cloves (with skins on), poblano peppers, jalapeño pepper, and Hatch green chilies on the grill grates.
3. Roast the vegetables, turning occasionally, until they are charred on all sides, about 10-15 minutes. Remove from grill and let cool slightly.
4. Peel the garlic cloves and remove stems from peppers.
5. In a food processor, combine the roasted vegetables, chipotle pepper, cilantro, lime juice, aged tequila, balsamic vinegar, smoked paprika, ground cumin, and salt.
6. Pulse until desired consistency is reached.
7. Serve immediately or let sit for 30 minutes to allow flavors to meld.
