Your video means alot to me. My mom always told me that there were weeks when she was a k8d, where her family didn't eat anything but beans and rice. She lived in a family of six, an older sister, older brother, younger sister, and mom and dad. Even though the family pitched in, they still struggled alot and they were pretty poor. They make the most amazing beans, but I never learned how to make them. After watching your video I was able to learn how my family got by. It's such a small thing, and you won't look at this, but I appreciate it so much. Thank you.

Jordan Payne I am so so glad that it means a lot to you and I am able to show people how to make beans because I came from the same background as your mom. I have 10 siblings and I grew up poor and the only thing I ate was beans and tortillas. I realized so many people didn't know how to make beans but they are so simple, good for you, and there are so many things you can do with them.

I LOVE RE-FRIED BEANS!!! My wife is Texican and she makes these beans about once a week. She fries them in bacon grease for extra flavor and lessens the salt needed. She also chops up the onion half that was not used in the boiling process, and uses it in the frying process. The house smells so good while they are cooking (slow boil, her total time is about 4 hrs), that I keep stealing little bowls throughout the cooking process. Add some of her home-made tortillas and who needs anything else? (Maybe a cold beer!) Thank you for this. :D

For r,refried beans (we would have for breakfast), she would fry bacon, and used the bacon grease in the refried beans. OMG! The beans were so good!

Anything you cook with bacon would taste "the best", of course. What most people don't understand is beans have a smooth, mild flavour, which of course wil be completely overpowered by the strong, greasy flavor of the bacon. Also, you don't need to soak them overnight for "whiteness". If you cook them right, dry, without overnight soaking, you still will be able to get them "white"

I heard a story from a friend of mine about some fancy nutritionist coming to New Mexico about 1920 or so, before New Mexico became a state. He supposed he would see lots of evidence of malnutrition. What he saw was a thriving community who ate beans and rice regularly; this is a perfect protein. They also ate a lot of vegetables in season and some meat, chicken and fish, but in moderation because it was hard to come by. I still love making a really good rice and beans recipe, wonderful for breakfast, lunch or dinner!
