Rice Noodle is used for many different recipes, including soups. You've probably seen this most commonly used, however, like a garnish under a Mongolian Beef or Chicken Lettuce Wrap mix. It's also used in Korean Spring Rolls. Either way, no matter what you're needing it for, here's the easiest way to cook your Rice Noodles Crispy or Soft. we don't do this in our Thai family, but it seems effective and I condone it. On they frying, we flip it on the other side, then remove. On the soft noodles, we soak it a few min, then use it in recipe for stir fry, since it will get cooked all the way in the process. For soups, we soak, then boil it, then rinse and return to soup.

Annie M I know I make it look easy, but it's so important to have your oil up to temp before you drop them in and be just as prepared to yank them out or they'll burn. Good luck!

Thank you! I tried to cook them according to instructions on package but ended up with a ball of soft noodles that were imposible to separate.... Now I know what went wrong! lol

Crispy Noodles are often served as a garnishment underneath dishes like Mongolian Beef or Chicken Lettuce Wraps. All of which I have AMAZING recipes for! ;-)

Yes... they're a great addition to many Asian recipes, including Chicken Lettuce Wraps, Mongolian Beef, Firecracker Shrimp, Orange Peel Chicken etc.; all of which I have recipes for, if you're interested. Just lay a hand full of crushed crispy rice noodles on a plate and serve your favorite dish over the top! ;-)

This is great. I'm wondering, is there any reason that, in the name of simplicity, one shouldn't just take the pot of boiling water off the heat, then add the noodles directly to it, thus eliminating the use one bowl and the need to pour a potful of scalding water?

Restaurants like P.F. Chang's and Typhoon's put recipes, like the ones I've listed below, over the top of fried crispy noodles. They are often a garnish in dishes from the Cheesecake Factory & PF Changs. Sadly, the Cheesecake Factory discontinued one of my favorite recipes; Crispy Crab Wontons aka crab Rangoons. The fried rice noodles was a garnish. Along with shredding cabbage. All that together tasted yummy. Could you omit the crispy rice noodles? Of course, but I like the difference in textures.

You should use sesame oil.

Nah. This is basic prep before added to any specific recipe. If Sesame Oil is desired from there, then yes, by all means add it.

Do you strain and save your oil? Are you using peanut oil? I also like frying the noodles a bit more til they are a slight golden color.

love your video.. can you pan fry them at all? I am not keen on the deep fried just cause I don't eat deep fried food.

Yes, you can absolutely pan fry the soft noodles. The deep fried Crispy noodles, however, have to be deep fried to get them that way but can then be added to stir fry, mongolian beef, etc..

I just went to an asian store and got the rice noodles. I thought it would be prepared like a soup. Well what's something good I can do with them or added to anyone?

When Fried, they are commonly accompanied with Chicken lettuce wraps and Salt and Pepper Calamari. Usually the chicken mix and the fried calamari are just pored over the top of of the crispy noodle. At the sushi restaurant I go to down the street, they serve it with salmon, asparagus, scrambled egg, radishes, faux crab meat, ginger, wasabi, and soy sauce.

I've seen videos where the rice noodles are soaked in warm water for ten minutes before being boiled. Is this necessary?

That's what I do for soft noodles, but it's full of water (its doesnt all drain out) and so is sluggish and mushy :(

Hey i know this is late but really make sure you dont over cook your noodles. I cant stress enough how quick the noodles themselves cook so try to lean on cooking them a lot less especially if your adding them to a stir fry. It is really easy to over cook them and it does make them very mushy. A lot of noodles will cook in warm water and boiling water over cooks them sometimes even!
