we don't do this in our Thai family, but it seems effective and I condone it. On they frying, we flip it on the other side, then remove. On the soft noodles, we soak it a few min, then use it in recipe for stir fry, since it will get cooked all the way in the process. For soups, we soak, then boil it, then rinse and return to soup.

Annie M I know I make it look easy, but it's so important to have your oil up to temp before you drop them in and be just as prepared to yank them out or they'll burn. Good luck!

Yes, you can absolutely pan fry the soft noodles. The deep fried Crispy noodles, however, have to be deep fried to get them that way but can then be added to stir fry, mongolian beef, etc..

Yes... they're a great addition to many Asian recipes, including Chicken Lettuce Wraps, Mongolian Beef, Firecracker Shrimp, Orange Peel Chicken etc.; all of which I have recipes for, if you're interested. Just lay a hand full of crushed crispy rice noodles on a plate and serve your favorite dish over the top! ;-)

They are often a garnish in dishes from the Cheesecake Factory & PF Changs. Sadly, the Cheesecake Factory discontinued one of my favorite recipes; Crispy Crab Wontons aka crab Rangoons. The fried rice noodles was a garnish. Along with shredding cabbage. All that together tasted yummy. Could you omit the crispy rice noodles? Of course, but I like the difference in textures.

This is great. I'm wondering, is there any reason that, in the name of simplicity, one shouldn't just take the pot of boiling water off the heat, then add the noodles directly to it, thus eliminating the use one bowl and the need to pour a potful of scalding water?

When Fried, they are commonly accompanied with Chicken lettuce wraps and Salt and Pepper Calamari. Usually the chicken mix and the fried calamari are just pored over the top of of the crispy noodle. Hey i know this is late but really make sure you dont over cook your noodles. I cant stress enough how quick the noodles themselves cook so try to lean on cooking them a lot less especially if your adding them to a stir fry. It is really easy to over cook them and it does make them very mushy. A lot of noodles will cook in warm water and boiling water over cooks them sometimes even!
