I love Sopes! I get them from a taco truck in my small hometown. The nice folks who own it don't speak much English, and I speak very little Spanish, so ordering can be interesting! Amazing how far a friendly smile can get ya.

I’m so happy right now. We were in Loretto Mexico some years back and every day I ordered potato sopes from a nice cafe. All of a sudden they just closed. I’ve never forgotten how enjoyable they were. So I’ll be trying this recipe soon. Thank you Rick ❤️

We fill the sopes with refried beans or rajas with requeson then dip them in a enchilada mole sauce and then fry up the sopes. We top them with salsa, lettuce, sour cream, and cheese.

A bit confusing, but I think op means beans are put between 2 layers of masa dough, then dipped in sauce before frying.

Sopes are the most underrated Mexican dish. My partner's mother(from Pueblo) would always shallow fry them for the second cooking and I love it that way. Nice and crispy.

And that is how I keep him promoting him on GuildWars2 and Final Fantasy XIV when I do either raids (waiting for lfg) or the praetorium (literally is just a spam of cutscenes), I start talking about food -> Mexican food and sent people here lol... his tomatillo salsa got 7 new subs from one run. But yeah, many don't know about him.

I LOVE Masienda. Their comal and tortilla press are very high quality and will last for generations. I also love their masa harina, made from heirloom corn. It is infinitely better than what you get at the supermarket.

Those are authentic sopes,simple and delicious, other places stuffed them with lots of Ingredients but thats for purpose of offer more to sell or to fill the stomachs at some homes,congratulations Chef you are the best!

YUM. We always had sopes as a meal though, with beans and meat , queso fresco and topped with your preference. Mole and crema always good too. I have to make these soon, brought back memories!

Thank you chef! I ate some bread that my employees baked on Orthodox Christmas, and I got the piece with the plastic baby in it. Apparently I have to make tamales, or something else good, on February 2nd. This looks like a great option, my tamales are good but not great.

Muy Sabroso! My first sopes were eaten in Puebla, MX. I wonder if one couldnt just dip them in the deep fry just long enough to crisp them up? Yep, I would definitely be using the lard instead of safflower oil. Go big I say. Where did you get that fantastic comal? looks like a non stick surface and that curved edge is a fantastic idea. OH, and the folks in Oaxaca who make those tortilla presses would be smart to imprint the different circles on the bottom of the plate for sopes, tortillas, etc. as a guide. Thanks for these delish memories.

In Tijuana and Ensenada (possibly other parts of Mexico), the classic preparation for a sope is a thin layer of beans, then shredded beef, a little bit of cabbage, some sliced radishes, then topped with a roasted tomato and oregano sauce, some queso seco, and maybe a dollop of Mexican cream. Rick has mentioned this before, but Mexican cream/crema is similar to a creme fraiche or just a plan heavy whipping cream. It's not the sour cream you usually get at American places.

By the way, in some states of México sopes are called "pellizcadas" (pinched) or "picaditas" (minced), for pressing action by fingers.

My family also calls these gorditas, we make them quite thin and often use asiento from the left over manteca from asado de boda.

Love these! Rick, do you know about the variety that are fried till they puff up and then the top is broken open and the whole thing filled? I only know a single place that does them like that, but it’s my absolute favorite sope style. Would love to see a video on how to make them if you know!

Also called picadas o gorditas wich are not fried, only a light oil or lard coating I the griddle…my mom makes what we call sopes a bit different, same base but different toppings (mashed potatoes, lettuce, fresh cheese, salsa verde and crema)
