Oh my goodness what deliciousness! I had never tried a sope until we moved up here to San Antonio and just love them. I'm so happy you've posted this recipe as you've now shown me how to make them. My partner Johnny just loves them and he's a vegetarian, I'm always looking for fun ideas to kick up meatless dishes. Have tried a couple of your recipes and my family love them. Their fave is the huevos rancheros. Food from Mexico is our favorite. I grew up in west Texas so I had them as a child as a lady who babysit us would make them for us. But my daughter, son-in-law and granddaughter had not ever had them because I didn’t grow up with recipes from Mexico. I so wish you had a cook book I would definitely buy it. Thank you for giving such wonderful recipes and instruction. Can the sopes- the corn tortilla be frozen ahead of time then thawed and the rest of the recipe made? I mean frozen after you take them off the hot pan and pinch the little ridge around them.

I've never frozen them, always make them fresh because I dont want them to dry up. You might want to try it out and see.❤

When I’m in Texas I use store bought, they make good chorizo in South Texas, and when in Ohio, I make my own which is just as good. I have a chorizo recipe my friend.❤️
