I made this tonight, a family favourite for the last 30 years, never gets tired; the Italian guy that first introduced me to it about 40 years ago called it crespelle and sang a little song as he pronounced it: 🎼crespellini, crespellini… funny that has remained with me for so long… thanks Joel, your recipe is the ‘correct’ one that I remember and reminds me of great times in Europe

Lucky you having fresh basil in April! This is a fabulous dish to have with a good Chianti and a log fire. I made something similar last year but used a romesco sauce I'd made with jarred red peppers. I topped it with finely chopped toasted hazelnuts at the end. Have spinach planted and can't wait for summer. Thanks for sharing. And slavi Ukraini!

Bon! I like to flatten out the filling so the sheet spirals through it. I reallise it's no longer a 'tube', but this way there isn't a lump of pasta on one side.
