Mrs. J., you are a VERY good instructor. You make even the really complicated recipes look do-able and not at all scary, which, in itself, is quite a feat sometimes. I have learned EVER so much from you. I have been following you for several years now and no longer bother looking at other sites anymore because I know that YOUR recipes are always delicious and your methods are reliable. I have several friends who cannot bake AT ALL who always ask me to make one of your desserts for them to take to their office pot-lucks or church gatherings. So thank you. Thank you VERY MUCH for sharing your skills. I will be trying this new cheesecake recipe this weekend and I am sure that it will be as delicious as all your OTHER desserts are.

Watching you enclose the spring cake pan in aluminum foil reminded me of my inability to successfully make a Japanese cotton cheesecake. Stephanie I would LOVE to see your way of making a Multi-Layered Cheese Cake with Ricotta & Cream Cheesecake and it’s considered a Japanese style Cheese Cake. . There are 3 layers to the cake & it’s supposed to be much lighter & creamier. Seems to be called: #Magic Cake or Magic Custard Cake 🍰. Your videos explain procedures so much better than anyone (on my opinion anyway) and I’d love to try a Magic Cheese Cake with 3 cheesy layers and also maybe with fruit like Cherries or Strawberries baked into the Magic Cake. You really are just so much better at explaining the reasons why we do things & it helps carry over when baking other tricky cakes & pies. Thanks.

Cheese Cakes are easy to make, I was going to make a chocolate cheese cake, with cherries on top, but you talked me out of it. Cran-Raspberry Sauce is new to me ... It sounds pretty good to have on top... I have to try this for Christmas this year instead. Thanks for the new idea and for sharing this recipe.

I served the stollen I baked yesterday at our Bible Cafe today. We had 2 new visitors, and one of them really loved the stollen I made, and begged me to sell it to her. BTW our cafe is an outreach of our church so we serve everything free of charge. Thank you for teaching me a good recipe.

They are under baked. But if the outside is done then your oven is running hot. I would reduce the temperature and bake them longer. If you have one check your oven with an oven thermometer and correct for any error.

I dont think its lazy to use the food processor. You had to pull it out, use it, wash it and put it away. Dont discount any work a woman does!

I wish I would’ve seen this before I made mine tonight because I’ve heard that the water bath keeps it from splitting on the top….aaaaaaaand mine did break in three places. I made a raspberry sauce, but it was really really tart. I added extra sugar, but I’m hoping, as you said , that’s the flavor mellows a day or two later. Thank you for posting this. I knew I’d find my answers on your page.

If your pan is deep enough to hold all the batter, you could use an 8 inch pan. Although the baking time will be longer. Not sure by how much as I've never used a smaller pan for this cheesecake.

You can put the lemon zest and sugar in a food processor for a few pulses; it will help the sugar and zest incorporate.

Quick tip on the water baths - use a crock-pot liner in addition to, or instead of, aluminum foil! Mine always leaked till I did that.

Dear Stephanie, yr expertise in baking truly comes through yr videos.May I ask a little question:- If we let the wrapped cake pan sit on a wire rack n then sitting in the water-bath, would there be any difference in the final product?? Just curious😘My apologies, Stephanie, I didn't make myself clear enough. Actually what I meant was-- if I place my uncooked cake pan on a wire rack n bake in waterbath rather than place uncooked cakepan directly in water(wrapped with foil) to bake in waterbath, would there be any difference in the texture of the final product.Thanks, Stephanie, you are definitely a good helpful teacher.♥️

You want to take the baked cheesecake out of the water bath to stop the cooking of the cheesecake. If you left it in the water bath the cheesecake would continue to bake until the water cools off.
