I prepared a risotto with few ingredients but of quality and above all fresh. Mortadella and Parmesan are the main ingredients, but also fennel and walnuts. And the butter? Obviously it cannot be missing!

🔥 PREPARATION:
00:00 Introduction to today's recipe: Risotto with mortadella and parmesan plus butter and fennel
00:05 Ingredients
00:23 Chop an onion and pour it into a pan with oil and butter and brown
01:23 Slice the fennel
01:49 Stir and melt the onion, add a little vegetable broth that you were preparing separately
03:18 Add the carnaroli rice and toast it. Deglaze with white wine and just evaporated, add the fennel. Cover with the broth and cook. Correct with salt
04:58 Cut the mortadella into cubes and grate the Parmesan
05:38 Just before it is cooked, turn off the heat and add the mortadella, parmesan and butter
06:15 Add a little more broth, season with pepper, sauté and stir in the risotto
06:45 Serve the fennel risotto with mortadella and parmesan. Garnish with chopped walnuts, fennel vedre and a sprinkling of Parmesan cheese
