Just flip the screws and keep the nut from the outside. No need to replace or cut.

Thanks Muneer, I ended up trying that and if you werent looking you would never notice the screw hanging down but it was one of those "i know its there" things. So i ended up just getting shorter screws after all. Really just a personal preference thing. Thank you for your support.
