I did the roast this afternoon. It the best I have ever had. My wife felt the same way. What I did different was to put the roast on the outdoor gas grill for flavor for an hour. I then transferred it to the oven. I only added water to the pan. I followed the temperature and time guidelines. The roast was so tinder I could cut it with a fork. With the grill taste it was wonderful. We will repeat this again. Thanks.

John, that looks delicious. Im having a go at cooking a joint today with your instructions as my nanna used to be in service in 30s and 40s and her cooking was just like yours. Looks great John. My Grandma always cooked a Pork roast dinner. I've never really been confident with roast Pork. That's what I love about your channel, you educate and inspire us to make those wonderful nostalgic traditional recipes. Nice one, it's my birthday today and you posted a new video today. What a gift. Never thought to add the liquid to the pork when cooking, I suspect that gravy is second to none. I've added cider in the past to roasting pork steaks or chops. I'm going to do the same in future for my full roast leg of pork. John, would you recommend the additional liquid for other meats destined for the roast, does it also help moisten the meat?

👍🏻 good going John. I make mine like this but I use a salt/ sugar mix to sprinkle on - have to watch it closely though as can catch a bit faster if not careful. Love it with sage & onion stuffing and bramley apple sauce just like you. Never tried making the gravy with cider though - sounds delicious 😋

Hi John first of the pork was to die for the whole family loved it I've never been a fan of pork for some reason whenever my wife cooked it it never tasted right and it also smelt a bit funny to me But I cooked this and now my wife knows how to cook it she said it was the best pork crackling she's ever had. I think my oven is running I bit hot as all the fluid evaporated pretty quick so I've just purchased an internal temp gauge. Keep trying your recipes and not had a bad one yet (well I did but that was my to fault to much onion in the burgers) And as I type this my kids want me to cook it again next weekend. Thanks and a thumbs up from me 👍

Just cooked roast pork on Sunday last. Funnily enough I do it almost exactly how you do and also coincidentally it looked exactly like yours with the same funny scoring on the crackling, so it came out the same. We must shop at the same supermarket.

I haven't had this in over a decade, & I have a pork butt ready to go for tomorrow, going to give it a coat of salt & pepper overnight. I think it is the gravy I'll enjoy more with mashed potatoes, love pork gravy, & lamb gravy too, (not mixed) w/ mashed. Thank you!

I make this last night, the crust came out like a layer of fried pig belly / bacon, I didn't have what it I needed to make the gravy amazing, next time I'll have the pork broth, spices, & veggies to roast with the pork.

How do i make this and yorkies and roasties AND stuffing with all the different oven timings - yes, I have a pathetic basic oven with only two shelves. I often use the hotter [fast cook] temps for meats to accomodate the 'extras', but I really like the look of this slow recipe.

My advice is to cook the Yorke's and stuffing before. Then they are easily reheated while the pork is resting.

How wonderful to see such a succulent roast. I used to cook such pork roasts with a very crisp skin, we call cracklings. However, these days I no longer can find such a roast, not even at my local butcher. Instead I get a lump of meat wrapped in plastic. 😬😬😬

That looks wonderful but you never find a boneless leg here in the usa supermarkets. My mum always made a pork joint and the fight over the crackling was on at the oven after she peeled it off then scored the fat then back in the oven to crisp up💕👍

Oil on the skin? Never heard of doing that, I thought that was a big no-no. I've always got crispy crackling just by making sure the skin is bone dry (I use a hairdryer if the meat comes in a placky bag, open in the fridge until use too) with just salt n pepper. Never used water either but hey, looks great. BTW Olive oil is pretty bad for you cooked at that temperature, lard would be better I'm guessing. Olive oil has a smoke point of about 80/90 degrees.

Hi John, I have never been able to perfect the crackling of the pork and that’s why I don’t make it often at all. I heard that the initial really hot oven does make a huge difference and also re scoring the skin and using rock salt is better salt to use. Not sure if this is true but that’s what I’ve heard. Love the pork it looks wonderful
