People, the meat is not red because it's medium rare, it's red because of the smoking process.

I was raised by my Grand parents,Grandpa Hunted,was a very large farm, a lot of wildlife.I can remember my Grandmother cooking Goose,Duck,Quail,Pheasant,Venison,Wild Turkey.They seldom went to a Grocery Store unless it was for Canning Supplies or something special,like cheese or Milk,Flour,something like that.They raised cattle/hogs,grew a very large garden every year,canned everything/including meat,they also raised Chickens for Eggs/meat.All GOOD FOOD,THE ONE THING I HAVEN'T HEARD IN YEARS AT THE TABLE IS,WATCH OUT FOR BUCKSHOT,I MIGHT NOT HAVE GOT IT ALL.

Tip: If you want to leave the fat in the sauce but dont want to see the fat droplets, add 2-3 teaspoons of potato flour and mix really well. this ill help the oil and the water to emulsify.

My family did a lot of goose hunting when I was growing up. Christmas goose was a family tradition. My mother used to make a sauce out of gooseberries to go with it. It was simply delicious.

That's a fine looking goose. Sauce looks fantastic. I was going to cook a goose for Thanksgiving but was a bit surprised at the 70$ price tag for a frozen raw goose. They are delicious though. If you've never had one, try it.

Chef John: My German friends and my (then) German GF's parents in Bavaria made a roast goose every Christmas Day, it was a very lovely tradition and delicious. The secret to a non-greasy, juicy, crispy goose is grabbing a fork and pricking the skin (NOT the meat!!) all over and then roasting it (same technique can be used for a crispy duck, by the way). Basting it with the rendered fat as it cooks will make it render more fat and also get nice and crispy! They also served yummy red cabbage (braised with cider, an apple, a slice of old bread, etc) and freshly made and airy potato dumplings (with a crouton in the middle!), and of course, a nice red wine. It was simply amazing. I tried it once here in the States, it was also good...but the goose (which wasn't easy to find and had to to be special-ordered by a high-end supermarket in the NY area) cost like $75....and my American GF said......."Hey, it tastes like a nice duck!"....!!

I always feed geese, I don't think I could eat one. I love when they fly over my house every morning talking to each other. My dad took one home that they cooked at the bakery while he was working one year.

Smoked goose is really good, but your local grocery store probably won't have it. You have to go to a meat market, and it's going to be expensive because the smoking process is rather time and labor intensive. But it's worth it. Of course you can smoke your own if you have a good smoker rig. Although this is an old video Chef John has so many I just now ran across it, and plan to try it soon. It looks better than the way I've made it in the past.

I have made smoked goose, but not the blackberry sauce. BUT! I NEVER removed the (flat?) part of the wing, my dad would have KILLED me if I removed it and used it for sauce. That is his favorite part of every bird. Mine probably taste different, mine is from Croatia, but the taste of goose is amazing.

@DoraNahoj no it's dark brown. But this is cured and smoked. It's the same thing as a ham. Normally white pork is unless it's cured and smoked like this.

Internal temp of anywhere between 135 - 140 is preferred. Remember, this is waterfowl, not your average poultry, no risk of bacteria from undercooking. Duck and Goose is supposed to be like a nice slice of prime rib beef, red and juicy.

Yes sir that is absolutely correct. If you're going to try and overcook it so it's grey, just don't bother to cook duck or goose. Stick with dried out overcooked turkey, it's a lot cheaper.
