What an appealing way to "dress up" winter squash! Had a huge crop of butternuts from my organic garden this year so I think this looks like it will go on my to do list! Hello from Canada. I made this last year after watching your video, it came out perfectly. I used an elderberry wine jelly that I had made some time ago and home grown butternut. Both boys and their wives enjoyed it and the biggest surprise was my husband ate it and went back for seconds. He never eats squash! I had a half left over so gave it to our offshore workers and the one that actually cooks wanted to know how to make it. Sadly we missed out on thanksgiving with the family just too busy on the farm I will try again for Christmas this year. Great easy recipe, thank you.

I love butternut squash and the hassleback method sounds interesting. I’m not sure about the cranberry sauce, but I like the pecan idea. I might do it with butter and brown sugar. Thanks for the idea!

Looks good. My Mom did an easier version of this - using the small green acorn squash - cut in half, cleaned out, slice/cut as little as possible to flatten out the green side, put open/orange side up in a pan with water & bake until "fork tender", then spoon in the "sauce" (butter, salt, brown sugar and whatever else you llke), cook until butter melts - stirring to mix the brown sugar. So easy, so tasty and looks pretty on the plate:-)

Looks delicious! I have done this with russets, but I am thinking that it would be fun to do it with sweet potatoes for the holidays. I normally slice my sweet potatoes and top them with butter, brown sugar, and a slight amount of cinnamon, but I think to do them then the hasselback style would be really a great presentation. ❤️

It looks apertizing. Although here in England, UK, we don't have a national Thanksgiving Holiday; I would still be inclined to add something like this to our Harvest Festival meal. Being from England in the UK was the reason I said I was browsing through a UK natural dried foods website a while ago. Purchasing here at home in the UK is often the most affordable way to shop. The cost of shipping between the UK and US is way above most people's budget sadly. But despite this I do manage to get access to American products at a wholesalers I shop at every so often when stock arrives. Because wholesale is in bulk I get a more reasonable price and can stock up.

This looks delicious. I have two QUESTIONS for you…… Do you think you could do the slicing the night before without the squash drying out since it is such a hard squash? Also, since I’ve only ever cooked butternut soup, how did you check for doneness? With a fork? Thanks for sharing this recipe!!

Pam, if you set the squash onto Parchment Paper into pan, you'll avoid any sticking or messy cleanup. You can buy on roll, or pan-sized sheets....I use the latter. The pectin within the cranberries will thicken the mixture as it cools.

@Jill Riffe A properly timed harvest of butternut squash will look exactly like in her video. Butternuts are fine textured and should not be fibrous. That said, your butternuts might still be DELICIOUS but just not as pretty.

Interesting recipe and the way you’ve demonstrated, I’d say, this I could probably do. I have a question, unrelated to this dish, but since you are a “preserving expert”, you might be able to address this: have you salt cured meats, the way our ancestors did? Bamboo skewers or chopsticks would work… I use those for hassleback potatoes… it’s harder than it sounds to not cut all the way through…
