I play around with Poulet Bleu Poultry, a small, family run, chicken farm trying to rival the legendary French poulet de Bresse. Although they recommend to break the chicken down and brine parts of it... I wanted to do a quick test with you guys. So I'm going to roast it off and see what happens!

"Old roosters." I miss the days when I could get a years old, tough as shoe-leather stewing bird. Slow-braised, for hours, the flavor is more chickeny than anything you may have experienced.

Saying they are lean is doing everyone a disservice. They have a unique fat profile that gives them their unique taste. When finished as they do in the Bresse AoC, the fat is marbled in the meat.

I have to try this bird. When Andrew made first cut and the meat was a different color than usual, my mouth started to water. It even looks a better quality.

I live in the Philippines and the “native” chickens are really good. They’re quite small so usually it’s one per person. Mikey Chen tried one right across from where I live.

Great video, Mr. Zimmern. I think I will eat ordering some hatching eggs of these chickens to raise for meat birds. Those old roosters are best when the bird is drunk before dispatching. That keeps them tender. Thanks, again!

I do grow these chickens in the ozarks, i also finish them on corn and raw milk. The usda butcher here won't leave the heads and feet on them, not sure how they are getting around that

Flip the bird breast down (ideally on a cool rack) when it rests. The juices will settle in the breast after about 20 minutes. If you want crisp breast skin, you may have to broil it breast side up again for a minute or so, but I’d rather have a more moist breast than a dry one.

This is the first time I've seen birds roasted whole, with head and feet still attached. Folding the legs into the cavity like that is... an image.

I just started my first flock of American Bresse chickens summer of 2022, and I very much appreciated your video on cooking this new bird for my little homestead. I decided to go with a sustainable bird for meat and this one seemed like a very good choice.

We just got a group of American Bresse too! This video is a great help to us because I'v raised chickens for years and I gotta say this breed is VERY impressive! Got 25 more coming this spring

I and my brother are raising the bresse chicken 🐔 n the upper peninsula michigan have not tried it yet as everything from coyotes to eagles also like chicken but am looking forward to a fine dinner soon, they are supposed to be finished with milk and grain.

Those are good looking birds. It's always nice to see them with narrow breasts, rather than the plumped up silicon porn-star variety normally seen. The best chicken I ever tasted was when I was about 7 in 1972 and our parents had driven us through France to Switzerland. Our parents bought some cooked chicken from a farm, and to this day I can still remember the taste. A proper farmyard chicken that hunts a few insects and has loads of room to roam is NOTHING like a supermarket chicken. As a Brit, we CAN get Poulet De Bresse (if one has a good line of credit with the bank, but they ARE available here). However, the worst thing you can do with them is roast them. Much better to use a less severe method of cooking on the protein (especially the breast).

We have free range chickens on our property that I a certain are every good as this. But, you know how if you grow tomatoes in your garden that you can’t legally sell them to a restaurant, even though everyone knows that garden tomatoes blow store bought tomatoes out of the water. The same is true of chicken from your own property. Their eggs.by he meat. Everything is a million times better. You just need land and a way to protect them and house them in a coop and keep an eye out for predators like hawks and foxes and you’ll enjoy watching them interact with each other. They scratch the ground looking for worms and grubs and they love leftover garden waste and kitchen waste like seeds from a papaya and whatever. Seeing them care for their young will make you realize how they are better them they majority of people in the world.

American poultry companies can produce any type of poultry that people desire given that these birds will cost more.

Went to the website. It refers you to another food store with no information on pricing, only a contact page. This tells me the birds ain't cheap. Nonetheless, I need to try this. Chickens in America are so adulterated unless you know a farmer. It's a shame what we've done to food in this country.

In Indonesia we call that type of chicken "ayam kampung" or "village chicken", which is a little bit more expensive than regular chicken.

Andrew, there's a thing called morphic resonance that I think is happening here. I've just finished reading Bill Buford's latest book, Dirt, where he writes extensively about chickens, varieties, and preparations, including being cooked inside a pig bladder. Then last night, watched an Eater youtube titled "Chicken that deserves as much love as steak". Then just amazing - there you are today roasting a poulet bleu and crunching on the comb, OMG, I am in love again with chicken! Now I just have to find them (and afford them). Thank you!!! I was born in Israel in 1951 and moved to Canada in '65. There weren't any "factory" birds to be had than. In the over four decades of living on this continent I haven't had any chicken in any style that quite tasted like "home". Especially as a soup. The flavour is just to weak.
