I have only started following you. I am 69 years old and been cooking since I was a little girl. Its always nice to learn something new and learn new recipes. I had roasted cauliflower in York England served as the main course instead of the roast beef or lamb. It was incredible. I am anxious to try your recipe.

There are a lot of different Zaatar spice blends. Every region has its own take on it, like Lebanese, Palestinian, Jordanian, Syrian (Aleppo)... There are even variations within the same countries. You could say each family or part has its own way of blending Zaatar. Also note that “Zaatar” is the arabic term for Thyme, so the Zaatar mix is Thyme mixed with some other spices. The “base” mix is Thyme, Sumac, Roasted Sesame, some salt. I guess most “Lebanese” Zaatar mixes would be that. Everyone plays on the ratios, if they like it sort of tangy/sour they increase the sumac ratio for example.... The mix can go from that base recipe all the way to having like 20 different spices and even peanut, roasted chickpea, pistachio powders. Even the kind of thyme they use differs in some cases which gives also another flavor. I guess the best way is to try zaatar from different countries to try and find what you like and you can always check the ingredients to see what to expect. Different brands will also have different tastes. I am Lebanese and we make our own blend in our family but I still like having other options on hand too, I like getting Aleppo and Jordanian mixes when I find them at good places. I like them all I guess each has their own flavor profile which keeps it interesting since Zaatar is like something we eat all the time, specially what’s called “Manakish” (on google) which is basically a pizza topped with Zaatar oil mix. Hope this helps😅

I'm Syrian and our Zaatar is mostly powder-y, brown in color and kinda sour, similar to the one you're using. Jordanian/palestinian Zaatar tends to be greener and relatively coarser in texture. Both delicious but you kinda develop a preference for it. I prefer the more sour one.

My favorite way to cook cauliflower is cut up into florets roasted with lots of EVOO, slivers of garlic, rosemary, salt, and balsamic. It is HEAVEN.

Mrs. Laura Vitale, info( you being Italian) 2 fellows named Ian Fleming( Irish), & Albert Broccoli( Italian) produced & directed the 1st few James Bond movies/ 007, Albert's family invented Broccoli as it has not been around but appx. 100 yrs. His family ancestors cross-bred cauliflower with Italian green beans & it resulted in a hybrid veggie they named broccoli, that is why it taste like cauliflower, but is green with smaller florets from Italian green beans.

Aww Laura, I am really happy that you mentioned Palestinian zaatr, in fact Palestinian zaatr does not contain pistachios and is more green and sour, so you have to try it. Thanks for this super yummy recipe😋

Great way and easy to cook cauliflower. Thank you! You should also show a greek recipe fot cauliflower, is called cauliflower kapama. You might know it. You combine cauliflower with tomato, spices like cinammon, clove, black pepper. It needs olive oil too since it is a lathero which is greek food with a good amount of olive oil. You serve it with feta cheese and bread as is or as a side dish for meat. Maybe some chilli flakes if you want it spicy. Delicious.

Yumm I made this tonight and it was delicious. I used a spice mix I had in my pantry which had onion, garlic, tumeric, paprika, celery seed, coriander, basil, oregano, dill weed, black pepper, parsley, thyme, cayenne, and cumin. I'm excited to try this method with other spices.

Zaatar is the best! In lebanon we sprinkle it on dough with olive oil then bake in the oven. Top it with tomatoes, fresh mint and cucumber 😌 It’s called Manakeesh

I’m Lebanese and there is no difference between our zaatar and the Palestinian one. Lebanon and palatine and border counties that’s why we share same taste.

yess omg i love how your incorporating levantine spices, i recommend you try palestinian zaatar its my favorite honestly it’s amazing!! The difference between them is that the Palestinian one has a more fresh taste

Hi Laura, I don't know what zaatar tastes like, but it sure looks good. I sometimes use a buttery breadcrumb topping. That's delicious, too. Bbq sounds good!! Love cauliflower!!

Just made zatar last week. Easy and delicious. I believe one version uses oregano and one thyme. I made the thyme version. Highly recommend. Tastes great with olive oil to dip fresh pita along side.

basically the original lebanese zaatar is with sumac, the flower of the green thyme, salt and seasame thats all we put the green flower of zaatar and fresh sumac in the sun till dry then we smash them with salt by a wooden hammer then we sift them and we return them to the sun for few days and keep them. we roast the seasame when we want to use or for a few quantity gradually. At our hpme we like it sour so we put 2 kilo of sumac for each kilo of zaatar but others kilo for kilo.

Hi Laura. I'm Mariam from Lebanon I've been following you for years now.. I love that you love the zaatar the Lebanese version. Our version is exclusively made from thyme, sumac and sesame seeds that've been toasted.. And of course salt.. The difference between Lebanese, Palestinian, Jordanian and Syrian zaatar is mainly the amount of sumac and sesame with the thyme and the kind of thyme itself.. And different additives such as sometimes nuts like walnuts and pistachios.. For me all of them are delicious in their own way.
