Our family was in Charleston SC and we had to try out Rodney Scott's Whole Hog BBQ. We were blessed to take a pitmaster tour and see how Rodney smokes whole hog in his restaurant. This is something many bbq restaurants fail to do anymore! South Carolina BBQ at its best!

Was in Charleston for meetings recently and went to Rodney Scott's. It was a revelation. Incredible whole hog pulled pork, collard greens, cole slaw and crispy hush puppies. I'm originally from Austin and have a reverse-flow stick burner and put out some pretty legit Texas que. Thinking about throwing up a cinder block whole hog cooker and going Carolina style.

Great video. What I have found striking, is that there is a video showing Rodney Scott cutting his own wood logs at the original family location, wheraes here, they use strictly lump charcoal in the smokers.

They only use lump charcoal to get it started in the firebox. They use wood and scoop the coals and place under the meat. Oak only is what she told me.
