I've canned once with our 90+yr old grandma. Peaches and salsa. It was so much fun. The best part was when all the seals activated and the noise filled the room of everything sealing themselves. Grandma did a happy dance and said that's her favorite sound in the world. I wish I would have learned more from her! Which is why I'm watching your videos!! You are so much fun to watch and very knowledgeable.

Upcycle....make a hole in the lid close to the side. Write on it with a permanent marker. Hang it as a plant marker, art, part of a wind chime, even prayers, or bird scare reflectors.

Nothing, but nothing beats home canned tomatoes. If I did it for nothing else, I would do it for the tomato juice I usually have left over from filling my jars. I think the magic ingredient for me is the lemon juice my recipe recommends. I like it so much that I add a little lemon juice to anything I make with tomato products from the store. Jess. The "Miss Shirley" in my life said to me "As you get older and your hands start to get some arthritis, you will only use wide mouth jars. You cannot fit your hand down into a smaller mouth jar to clean it well." I am 55 and have adjusted (bent) eyeglass frames for over forty years, i have me some arthritis, she was right, cannot get my hand down in a regular mouth jar to pack in green beans or clean it very well. I had a lady tell me she always had trouble canning corn, I did too. She said if you put a slice of green tomato on the top of the corn in the jar before canning it really helped. I did try this and it works.

I have water bath canned for years just pickles and tomatoes but Once I started pressure canning I couldn’t stop I have canned every thing I could get my hands on. I absolutely love growing food and then canning it and stocking up. Thanks for the lessons and all that you do.

Great video. I've been pressure canning for 2 months now, never water bath canned. I'm a single mom and it's a huge help to have meals in a jar made up. I want my kids to have the best food but we moms get tired especially on days we work. This is my way of avoiding convenience food. God bless you and thank you for the inspiration.

Hi Jess, I too have canned for years. I started with home canning with my grandmother and my mom. But its always good to refresh your knowledge with others. We never stop learning. This was very good. Thank you for your time and effort in this. There are so many who want to know how but dont have anyone to teach them. A few years ago a young girl from our church came to help me with my garden and canning. I got to teach her. We enjoyed each others company and I only had to show her once on every thing. We canned so much that summer. I tried to do different things so she would know verity. Carrots, potatoes, green beans, cabbage , beets , pickles, jam, sweet relish and pears from her tree. Her mother said June shes got to stop canning , my closets are full. This girl cans so much. This girl now is in last year of high school and her mother passed away last year unexpectedly. She and her grandmother cans all summer for her dad so he has something to eat while she is away at school. Bless her heart. God Bless you Jess for this video for people. Canning is almost a lost art to some who never learned. Oh by the was I put up more tomatoes yesterday, I got 34 quarts. 💕

Great video. I love canning but my 83 yr old mother is so scared of my pressure canning because she grew up in an era where pressure canners really would explode. She wouldn’t let me or my brother in the kitchen when she was canning for that fear. I know it can be dangerous but you just have to pay attention and follow the rules and your fine. Love from NC

I remember the first time canning salsa. I water bathed canned them. It was so good that we ate it all (6 quarts) in just a week. Later learned that the onions and other stuff I added lowered the ph and needed pressure canning. Thankfully we didn't get sick because we ate it soon enough. LOL

This was an excellent video for canning beginners. Even though I learned how to can over 50 years ago, I thoroughly enjoyed it. I believe one of the best parts about canning is controlling what goes into the food your going to eat. That and how beautiful a pantry of glass jars look!

I worked for years at a cannery I won't mention which company but let me tell you what you eat from canned foods isn't always what you think. When I first started I worked on the tomato belt, snakes, rats, and all manner of things besides tomatoes came down that belt and into the big canner for sauce. So just because you buy it at the store and it comes in a jar or can doesn't mean it is perfect. I would rather trust own canned and frozen food over something I haven't seen canned.

I am a cheesemonger that works for a large supermarket chain (Kroger, its a good company). A woman once found a grasshopper in one of the produce bins with the lettuce and she raised hell about it. It is not at all unusual for food grown outside to bring some of the outside with it. It is not gross or unsanitary at all that animals that live outside might come inside with your food. Sorry, this is the reality of growing food.

But, like you said - no need to buy commercially made pasta sauce ever, but when I make my own, I do use canned Italian tomatoes & paste, as to me, they have a much better taste, but it sure would be wonderful to use home grown simmered whole, plus chunky, plus purred tomatoes & also a homemade paste, so we know exactly what went into the making of the sauce. . Also, there are some nice quick homemade pasta sauces which don't use long simmered ingredients. Some use freshly chopped tomato which is only lightly cooked, along with other veggies of choice, & olive oil used as a base. There's also Pesto, of course, made of various greens these days, instead of only basil, & maybe using walnuts instead of the pine nuts. A simple toss in heated Olive oil infused with sauteed garlic, with S&P, & freshly grated cheese is wonderful as well.

If possible, a series on basic fermentation would be very informative. That presentation method is something that freaks out alot of newbies and its a wonderful alternative to traditional canning to have in your treasure chest of knowledge and experience. You are such a good and patient teacher, God has blessed you with the anointing of the teacher, i am sure you could do fermentation proud!!!!🤗

That's a good idea! I'd love to see where/how she fits all of her canned food. I feel like I need a special shelving system just for all those cans, and I know they need a cool, dark place, but my pantry just isn't large enough and I don't have a basement.

If you're building a pantry, plan on making it larger than you think you'll need. Trust me, you'll use it all!

It does take space and if you don't have a large kitchen don't let that stop you. You just need to resolve that you will have canning supplies and potentially even canned food all over your house. I know my mom keeps her pressure canner in her laundry room, its to bulky to take up space in her kitchen and visitors don't really go into the laundry and she decided that it would just have to live there. I keep extra jars in the garage. I also have a fun old dresser that I use in my entry way of my home, it holds lots of my canning supplies because I don't have room in the kitchen and why not use those drawers for good. Just get creative and you can make it work. The other thing to remember is to keep your canning efforts inline with your space. If you only have 1 cabinet that you can store your jarred food in, make sure you only can enough for that space. If you go out and can 100 jars of tomatoes and only have room for 25 in your cabinet then you are going to have a mess. Hope this helps.

Hi Jess, I liked what you've said about doing things on a small scale until you get your homestead. I listened to this video last week, determined that I.was going to buy a canner and dig in. Yesterday, I found a brand new Granite Wear canner set, the insert that jars sit on, colander, blanching pot with draining pot that fits inside, lids, manuals, and 5 pc accessories box, all for 15.00!!! (Fifteen) I'm listening to this video again, and love then ALL!

I love your videos. You are just the sweetest person! I have never pressure canned, but have made jams/jellies and tomatoes in a water bath canner. I happen to know someone who almost died of botulism, BUT the source was a restaurant that improperly canned a low acid food using the water bath method (hot peppers). In the first place, it was illegal to serve home canned foods in a restaurant. Several persons died, and others were hospitalized (my friend was among those.) This was in Michigan in the 1980's. As you said, if you use the proper methods, there is no reason to worry.

Thanks for this series, Jess. My mom used to can foods for a time, then stopped, long before I was old enough to actually learn from her. I still have her big enameled, white speckled black huge pot she used to boil the jars, & a few months ago, bought several sizes of canning jars, plus had bought the jar lifter thing & geen jar funnel in the BAll kit. Will need to relocate the magnet on the end of the plastic thingie. Didn't know until recently it is used to pick up the jar lid without touching it. Cool. So this year, I hope to get started. Re: Botulism, I have feared this too, so wasn't even going to try canning. So thanks for your comments on this topic. I'd like to share a very important thing I learned years ago. The use of garlic in the contents is of the utmost, critical factors - even when used in a homemade salad dressing, sauces, in a pasta dish or casserole, after a period of around 2 weeks, garlic can & does develop Botulism. It can also be a concern in canned goods, so do you think we should eat canned foods with garlic in them sooner, rather than later - like nearer to 1 year than 2 years, or what? One must must be cautious. I wish there was a test. Are you aware of such a test?

Canning is easy I used a book put out by Ball (I still have it) when we had a good sized garden with 3 boys one a teenager. When we moved from Missouri to Washington where the gardening was totally different I had to buy store green beans, tomatoes and all the other things I hadn't bought in years it took time to find products we were willing to eat.

I use the 2 quart canning jars for so many things! Storage of rice or beans, etc., I also bought a poring lid, so i can use the 2 quarts jars for pitcher. Great for iced tea!

2 summers ago a lady at one of the churches in my town died from botulism because of a pot luck they had from canned potatoes. Potato salad was made, several people were hospitalized and someone died. It was a very scary story. So I cannot wait for your pressure canning part to come out.

About the weck jars. I am Dutch and we use the weck jars. the jars you use are cheaper to buy ... but ... in the long run they are more expensive than weck. because the rubber rings really last for years before they need to be replaced. and the pots are much thicker so less likely to break. That’s being said, i love your videos.

I am just in love with this channel and this family! While I have had a small, very very small garden in the past this will be my 1st year with an actual sustaining garden to become less dependent on the grocery store... My husbamd recently went to work for Wal-Mart Distribution Center and it feels good to know That we are on our way to get paid by Wal-Mart instead of giving them all of our money!
