Cook on medium high heat (350F oil temperature) so Kababs can cook inside properly and then start browning outside - remember Kabab continues to cook after you remove from oil so it darkens further.

I always use lean then add oil if necessary

Maybe add a little more bread and add a pinch or two of baking powder. Hopefully this should help.

Oil is too hot your kebaab looks burnt needs to keep eye on oil

It’s not burnt these are also known as gola kabob crispy on the outside and soft inside
