Good job. Unfortunately, due to the condition of the grinding disks, I doubt it can grind evenly enough to make good coffee. Perhaps it could work for cold brew or French press.

I doubt that at the time this machine was made, there was nothing that could make finely ground coffee. It looks more like a machine for grinding malt. To then brew beer. At least that's what they sold me one for.

why don't you sandblast it right away and I would strongly advise against using gloves with a rotary wire brush

After watching, all the masters who ever lived in the coffin turned over, and the respected author, do not confuse the concept of "Restoration", you actually just brought it into a workable appearance, and not somehow did not restore it.
