Thank you so much for your videos. I grew up with everything cooked from a can or box from the store. I literally didn't have a clue about cooking from scratch. You are so very fortunate to have these skills for yourself and to pass on to your children. And, I appreciate you passing them on to me too!

Take that liquid and reduce it down then add back into your baked goods… it amplifies the pumpkin flavour! I do this with frozen zucchini and bananas too.

I learn to bake pumpkin in the oven from my mama's. But we always clean them out and cut them in half. I like the idea that you roasted them whole and it was much easier to clean them out then I always process mine to in the food processor as well everybody I don't eat pumpkin but everybody always request me to bring pumpkin pie because I make them from scratch I don't use the can and they can tell how much better they taste. I really enjoy your videos and I've learned a lot of new stuff that I didn't know keep up the good work God bless you!

Ruth Ann, to keep the cheese cloth from folding down into the colander, clothes pin it to the colander edge. Thanks for the recipes. Something new, tried and true to have for bake sales as well as at home. Have you thought of baking the pumpkins on a rack in the pan; poke holes in the bottom of pumpkin, as well, to let juice drain out?

My Mom used to take the extra crust dough an placit on another baking sheet,sprinkle cinnamon and sugar on it. In the oven it went until it was crisp!! Yummy treat!!!

I love your channel. I wish you would talk more about why you left Mennonite Community. But understand why you may not have. Anyway thank you for the Dropbox links. Very convenient. I do love watching you work. You are in control of the food, not the other way around. lol. Most people are so afraid. I am Full German. lol You cook with common sense and love. My SIL used to measure everything so carefully. Scraped off top with knife, and I just eyeballed things, pretty much. you know, have it look right. She said, that is why my things turned out better. I did not know, we were in any competition. I just cooked like I was taught and saw mom doing. "hunk of butter", "splash of milk", "till it looks right'.

Yep! I get so annoyed when people say cooking/baking is a science. Yes, science explains why the ingredients do what they do, but it doesn't need to be exact measurements.

Do you ever make sweet potato pie? A super delicious summer pie is one I learned to make from my first MIL, Dolores Conn, from Oklahoma. Make one of your delicious pastry pie crusts and blind bake it…set it aside to totally cool. Take 4 or 5 large freestone peaches…slip the skins by dipping the peaches in boiling water for 1 to 2 minutes then put in ice water…slip the skin. Cut the peaches in half and remove the pits. Slice the peaches into your strainer to let the juice go into a bowl Then make some homemade vanilla pudding using a double boiler over boiling water but do not let the boiling water touch the bottom of the upper pot, using 2 cups whole milk or you can use half and half…..cornstarch, sugar, pinch of salt, beat 3 egg yolks…temper the egg yolks with about half of your thickened milk, sugar mixture, mixing well after each addition of hot milk mixture…after you finish tempering your egg yolks into the milk, sugar mixture and have all of the eggs mixed in the milk, sugar mixture, put it back over the boiling water, keep stirring until we’ll thickened…add 2 Tablespoons of butter and 1 Tablespoon of homemade vanilla…..put plastic wrap on the top of the pudding for about 15 to 20 minutes so it won’t form a skin. Then take the plastic wrap off of the pudding and fold the well drained peaches into the warm homemade vanilla pudding, then pour the peach filling into the cooled pie crust…..then chill the pie well. Before serving cover the top of the pie with sweetened whipped cream. This makes a delicious pie and although I have searched and searched for over 50 years, I have never found a recipe for this particular pie in any cookbook. Dolores passed away in October of 2008 and she was, I believe born in 1918. She was my MIL for 17 years and she was a super fantastic cook even though she would never let you give her the compliments she so richly deserved. She was also a smart, beautiful woman and the grandmother of my oldest four children. I miss her, my own beautiful, beautiful, smart Mom, Dorothy, who died at 58 in 1984 from lung cancer and who was an outstanding cook, and my second MIL, Bernice, who passed away in April of 1997 at 65 from breast cancer. Bernice was not much of a cook at all but she was a great Mom and grandmother to all her grandchildren. I miss all three of them. My mom never got to see the internet, laptop computers, tablets or iPads but she was a really fast typest and loved her IBM Selectric typewriter and could take over 150 wpm using the Gregg Shorthand she learned in secretarial school. Besides being a great cook, she spent 28 years being the private secretary to the Vice-President of Public Relations at Bell Helicopter in Ft. Worth, Texas. My Mom would have loved watching your videos. If tobacco had not stolen her life in 1984, she would be turning 100 on November 23, 2025. I miss her each and every day. I learned so much from my Mom. On the Peach Cream Pie….you can just make any homemade vanilla pudding that you would use for banana pudding or for coconut cream pie. I promise you, that Peach Cream pie is a doozie!

I love cast iron cookware and have quite a bit of it but have never used a pan that looks as heavy as the one you baked the pumpkins in and at 75, I just don’t think I will ever have the strength to pick up something like that. I have also never just baked pie pumpkins whole. What a good idea and a great way to NOT have all of that excess liquid that I too have always ended up with. I can hardly wait to try your method. What an innovative, smart cook you are. When are you going to put out a book on cooking and homesteading? I want to get in line!

Ruthann, you and your family are such an inspiration! I just cooked my first pumpkin because of you. It just came out of the oven. I’ll be making my pumpkin pies and trying your whoopie pie recipe. Yesterday I made 12 qts of your apple pie filling and it turned out perfect. So today I’m making your pie crust and making apple pies to freeze and also fried/baked hand pies. Goodness my mouth was watering from watching you make all these delicious recipes. The way you baked the whole pumpkins are much easier than chopping it down to chunks . Thank you for sharing . I just wanted to say that if you have more pumpkins you can make a candied pumpkin candy that is so delicious . It’s a mexican candy recipe that you can find online and they stay fresh for a very long time .

I bought 2 Pie Pumpkins just before Thanksgiving to try your way of Pumpkin Pies. Oh my word!!!! YUMMY! I think I found a new way for pies and other assorted desserts. Roasted the Pumpkin Seeds. Thanks for all your great videos. I have learned a great deal.

This is a great method! Also, I do mine differently... I guess there are many ways to do a pie. I cut my raw pumpkin in half, remove the seeds/guts, then bake it open-face up. Most of the liquid evaporates out when you do that, no need to strain. You might get some dark edges, but you can remove those, or blend them up later. After that, you can easily scoop the cooked pumpkin out of the shell/skin. I like to place it in a bowl, then slightly mash it. At this point I take only what I need for one pie (if its only for me and my husband), then freeze the rest. I normally use 2 cups of mashed pumpkin for 2 pie. Why? That's about how much is in a can of pumpkin puree fromt he store, and most recipes are based on one of those cans. So after I have 2 cups left in my bowl, I will add my other pie ingredients (milk, sugar, eggs, spices). I give this a few stirs, then I put ALL the mixture in a blender, and blend until it is silky smooth. This does a couple of things: Mixes my pie filling very well, and turns the pumpkin into puree, all at the same time. Then I pour this filling into a prepared pie shell, and bake. I always bake my pumpkins when I want pie. I started making pies when I was 14, and I quickly learned that boiling the pumpkin is a BIG no-no, because it does 2 things: 1. Waterlogs the pumpkin, so you have to drain them and mash all the liquid out (extra work). 2. Strips a lot of natural flavors out of the pumpkin. Now I cringe when I see people boiling them, lol.

Beauriful video. I make pumpkin rolls every year...and sometimes at special requests for birthdays. The only difference between your recipe and mine is; just before baking the thin cake batter ,I sprinkle on top, chopped walnuts, then gently press them into the batter.. My family loves this cake. Thank you so much for your videos. I have always made pumpkin pie with canned pumpkin, so this year my husband told me to try to make it with actual pumpkins (after watching your video ). I bought the pumpkins, cut the top open and took the seeds out, after I baked the pumpkins and let them cool down, I proceded to take the skin off and puree them. Well my food processor had not problems with that, but ran out of room when adding the milk. I had to dump the pumpkin puree into a larger container and finish with a wisk. I made my crust from my own recipe that I have been using for 40 + years. The 3 pumpkin pies came out fantastic! The taste was unbelievable.. God Bless and thank you !

My Gram called them "lamb's tails". When I baked in a cafe, I made some on a whim one day and discovered all the men who came in loved them. They would all mention their mother or grandmother making them.

Ruthann, I love pumpkin pie 🥧 I can’t wait for a thanksgiving. Here’s a tip- put a wet paper towel underneath your cutting board, it will keep from sliding. Where did you find your cast iron roasting pan?

I second this!! I use damp dish towels (flour sack material) under mine. I used to struggle so hard with my board sliding around until I saw someone mention putting something wet underneath it. Mind. Blown! LOL No one was born knowing everything, after all 😊

Oh my gosh, Ruth! I am on a pumpkin cooking kick! I have baked 5 pies this month and have gotten 20lbs of meat for pies & dinner vege & 4 cups of delicious seeds. I also tried my hand at homemade crust ONLY because you made this whole process look easier than I'd thought. My family expects a surprise dish every holiday and though pie isn't a uncommon- 100% scratch pie is (at my house). Thank you for the inspiration. My friends & family thank you too!

I always used to cook my pumpkins on the stove . Clean them cut into chunks remove the seeds and pulp and put them in a stock pot with about a quarter inch of water to make steam and cook on low until the natural water comes out of the pumpkin (it will be a lot of water!). I remove about half of the water and then add my sugar and spices same as if I were cooking 🍠 sweet yams. After it’s tasty and tender then I removed the flesh from the water remove the peel and use a hand mixer to blend it with egg and milk and butter. ( you can make a spiced punch/tea from the pumpkin water). ( the hand mixer will pull out any strings that may be present).Then it’s ready for the pie crust or tart shells.❤

I also struggled many years with trying to get my cooked pumpkin the right consistency. I do bake, not boil, but straining is so messy! During our first holiday season during Covid, I finally had the idea to use some of the powdered milk I purchased (to stretch out my trips to the store, I used powdered vs fresh whenever possible, or a mix of half each.) The extra liquid in the pumpkin was the perfect substitute for adding water to the powdered milk and it tightened right up to the consistency I wanted!

Ruth, I bake my pumpkin like you do. The only drawback is I can't save seeds. I'm thinking of opening one to save seeds and then baking it. I had some in the freezer, which I thawed and drained. I tried dehydrating it. It turned out great. I will no longer freeze my pumpkin. This will save so much room and be shelf stable for a long time. Whoopie pumpkin yum. Where can I find the filling recipe? Thanks for sharing your video and recipes

Recently found this channel and you can work harder than anyone I know. I always cur my pumpkin in 1/2 to roast. I put it in the freezer for later use. Often makes pumpkin pie,butter and soup. Especially when you have a lot of cream. Yum I love anything pumpkin pie!

Ruth Ann, I've never seen a mixer like you're using here. I like how it's much easier to add ingredients to the bowl than it is with a stand mixer like I have. Do you have a link where I might get one?

I made this last night!!! Absolutely delicious!! My pie took about half an hour longer to bake. I think I added too much liquid, but it was fantastic! Thanks for sharing the recipe ❤

I have also put about an inch inch of water in the bottom of a pressure cooker and have done them this way also much faster and easier and it doesn't waterlog them. Just regular pumpkins have a tendency to have a large amount of moisture and I actually one time had to literally ring out my pumpkin before canning. My father-in-law absolutely was over the moon with my home canned pumpkin pie.

I love pumpkin with anything. I put the ground pumpkin spice about 1 tsp. with ground coffee to brewing and smell so good and tastes great.

Love your pumpkin pie recipe! Now I know why, although I do not remember specifically, I've not ever enjoyed pumpkin pie anywhere but home. I've never understood why people add all kinds of crazy spices to pumpkin. Must be my Dutch roots. Excellent! I can actually taste the pumpkin. I've always added nutmeg (which is my favorite desert spice) and a little cinnamon to my pumpkin pie. My Penn Dutch Mom (81yo) loves the whoopie pies. My children the pumpkin roll. Big hits here! You make everything so do-able. You're a great teacher!
