it has been in the fridge, perfectly ok! It actually has strengthen in taste over time lol

The most important part, is to lay it out on a sheet pan to dry out for at least 6 hours.

are you sure you got the right recipe? per the video from thatdudecancook it says it is: RECIPE: 1 cup Maldon(or kosher salt) 8 sprigs rosemary 4 sprigs sage 3 clove garlic 2 lemons zest only

I’d be using dried rosemary otherwise it may mold

I made a batch of rosemary salt 6 months ago and have no issues with it molding at all just keep it refrigerated

you made a pigs ear out of that, although the alternate was a blender recommendation some editing would have been better..., anyway. You have proved that that the blender is not a good choice, the recipe is sound. Food Prosser would avoid the violence
