Here's an advice to take this to the next level. All the spices besides the mustard seeds and cumin seeds go in the oil with the onions after the onions have become translucent. You need to let the turmeric, coriander, etc cook in the oil. If you don't, it leave behind a bitter sort of flavour which is very off-putting. Also when you add the water and tomato, add a little bit more water and let the dish simmer for 5-10 mins before adding the eggplant. After adding the eggplant, let that simmer for maybe 2-5 mins more.
