Our family has always eaten beef heart, tastes amazing sliced thin, marinated and quickly bbq'd with a spicy peanut sauce. Beef tongue slow cooked and also with a different spicy sauce, etc. Can also be made with a non-spicy sauce. We make use of more than just the meat for most animals. We're latin american btw.

Hi Jill, Great topic! Slow cooked beef heart in beef broth is so easy to prepare. We cool it, slice it for sandwiches and enjoy; in my opinion, it holds together and slices better than any other beef cut. All the best, Julie 🌷

We moved from the city to 10 acres and had a great steer butchered and served the beautiful roast to our friends visiting from the city. He wouldn't touch it - it had no inspection stamp! I almost laughed until I knew he was serious - did he really think each cut was inspected? for what? hand prints? Anyway, they never came back to visit and we totally enjoyed our hog, beef, and chicken that we killed, inspected and prepared. So funny now - that was 55 years ago. They also thought we were crazy to insist on organically farming our food. I'm so glad we moved and our kids were raised the best way possible - to be in touch with what they ate, planning, growing, processing, preserving. A great life. They are raising their kids the same, now. Thanks for the insight into organ meat, I watched Jessica from YT threerivershomestead cook tongue. I tried it and found it delicious, juicy, and VERY easy to prepare and cook. Crock pot! Peel skin after. shred and enjoy in tacos, that my family ate and enjoyed until they were done and I told them it was tongue - the kids just shrugged and said, it was still good but my own daughter said, Mom why did you tell me? YUK. It was the first time I ever tried it but I was determined to try and I'm so glad. She laughed the next day and brought me some coffee ice-cream, my favorite but in the future, she probably won't eat unidentified meat from me without knowing what kind.Couldn't agree more, fast food is tasteless! I can't tell pork from chicken or beef unless the menu shows. We are so ignorant of the real taste of meat if eating fast food regularly!Got to buy this book and your recipe book.

Perfect timing on this podcast! I'm trying to clear out my freezer in preparation for a new cow and the offal is what I'm having a hard time figuring out how to use. I ordered her book and I'm looking forward to trying some of the recipes.

I think it’s fair to say that in my household, we are absolutely carnivore eaters. However, not even close to the level spoken of today. Ashleigh’s perspective on eating meat was not only interesting but very educational. I’m inspired to consider asking for the organs with our next beef purchase. I think we are learning more and more in recent times, how agenda specific, the media is and how it’s used to pump an ‘understanding or way of thinking’ into our lives. The spin is always for serving a purpose that is not necessarily in the best interest of those who are watching and never leaves room for one to weigh options and considerations in order to decide on their own what they’ll eat, how they’ll manage their health, what they’ll drive etc. Society has been conditioned to ‘trust’ the media and therefore have stopped thinking or researching for themselves. Never mind that there is no accountability in the media for reporting multiple sides or opinions, again, leaving room to form our own conclusions. The school systems have done the same, instead of teaching children how to read, write, do math and how to think, they’re instead teaching them ‘what’ to think. Thank you for this podcast today, it was a very different but great topic! Grasping the realities of what we are hearing on such a topic as this, serves also as a reminder of what we’re hearing on so many other topics that affect our lives on a day to day basis. Oh, by the way, I’ve sure missed seeing your other videos!

Tongue is awesome if cook right. My dad who is 94 and doesn't eat anything that is different, went back for seconds. I boiled to get the tough skin of then fried with some bacon grease. Awesome 👍

When I was young, I loved liver and onions but these days it seems to not be available in restaurants. I also bought beef hearts on purpose because it was like a very lean steak when I bought it sliced up. It seems to no longer be available too.

Check with local butchers who process animals for farmers. You can put out a request for some because not all people eat it.

Funny that blood is mentioned. I was an exchange student in north eastern Brazil and for Festa de São João I remember cutting frozen blood to put in a turkey dish. Everything of that turkey that was edible was eaten. I remember cutting up tubes and some mix of stuff being sewn into sacs. I was oober grossed out and fascinated at the same time but it tasted EXTREMELY yummy 🤤 That turkey woke me up very early on school days so I might have some vengeful bias 😁

Every few months I go to my abattoir butchers. I buy at least one pigs pluck. I use the heart, lungs and some of the liver to make Old English Faggots, which freeze very well. What is left of the liver we have with with mashed potato and onion gravy. Really healthy meals at a low cost. I live in the UK.

@@nomir4065 Didn't realise I only have one liver recipe on my channel it's Liver Casserole. My favourite way for liver is fry like a steak and serve with mashed potatoes, veg and onion gravy.

Jill eating heart tongue kidneys brain is great for adults in minor amounts !!! Cook heart tongue in water until tender then cool it then slice it it is great on sandwiches so heart & tongue goes a long way!!! Liver is great I fry slices in butter it tenderize it but just for a few minutes if that for frying the slices have had all that I have wrote about learnt it from Grandparents !!! Even how to put a cow down!!! Bones are great for soup or bone broth!!! Tail of cow is great for soups also !!!

One of my favorite soups growing up was what Campbells called ox tail soup. I haven't seen it in 50 years but would love to find a can today.

My husband and I like chicken livers cooked in butter and seasoned with Mrs. Dash (garlic and Herb) in a milk gravy, served over rice or egg noodles. Heart is good but needs to be sliced thinner and cooked slower and for less time. We grew up eating organ meats, deer meat, and wild rabbit. My mother used to boil cows tongue and slice it for sandwiches. Brains can be served with scrambled eggs for breakfast. I have eaten turtle stew, fried rattle snake and other things people think are weird. I also ate raw beets right out of the garden. The point is I did not starve. As food insecurity grows it will pay to branch out and eat new foods. It makes sense to eat the whole animal and not be wasteful with our resources. We need to learn to appreciate our food again and regain our health. Many diseases are rooted in malnutrition. There is a reason Grandma told you to eat your fruits and vegetables. Our elders knew about nutrition. My bones are dense and I am in my sixties. I have given birth to six healthy children with no birth defects.

My mother’s side of the family are all Scots. Grew up eating most kinds of organ meats other than heart. Getting harder and harder to find any.

Not a mom but I've worked daycare for 12 years. And it's hard not to cringe when overhear moms talking about eating healthy for their baby and fretting about being told to avoid eggs but know there's a lot of folic acid in them that baby needs. 8-9 times out of 10 they immediately jump into 'but I take vitamin so should be good'. 🤦 The very few times been able to point out what they're even saying has gotten a blink / 'what? ' reaction but held onto idea because it's what they've been told. Or there's my family saying it's not something to understand without actually being there... So don't know what to respond to that.

I don't know if I could eat any of what y'all talked about but I will try but I don't agree with the telling others what I'm cookin. Mainly to avoid the looks of discussed on my families faces cause they won't try anything if they know what it is.

Know how to make ring bologna and smoke it also !!! Have a son that I talked into buying a sausage stuffer for us to use so you see it is something that you can do and make with things !!! Heart is great not rubbery at all if you grind it up into hamburger with other meats of the cow is like really great hamburger then for you!!! Organ meat does make the joints get bigger as a adult gets OLDER like ICE CREAM FOR US LADIES YOU GET THE POINT!!!

My family has always eaten liver and bacon. You start cooking the bacon sliced up lengthwise and slice your liver in little strips and bread it, then add to the bacon and crisp it up. My mother had seven kids and there isn't one of us that didn't like it

I think it's amusing that Americans aren't exposed to this. I went to Germany when I was 9 and at one place they brought out a whole pig's head to the table with the tongue hanging out. I also thought mercury in fish was the issue for pregnant women, not diseases or bacteria?
