My mom would remove skin and bones from 4 cans. She would add diced onion, 4 eggs, 2 sleeves crushed saltines. She would form the patties and fry in vegetable oil til golden. We ate them a few times per month with cubed potatoes and canned spinach. Loved them then, love them now. Our family of 7 was thankful

4 cans, wow but that's a big family. I use 2 eggs, a little milk stirred together, 2/3 sleeve of crushed saltines, with one can. I think I'll try some Yogurt/sour cream, onion and garlic powder and lemon juice. I use lid to squeeze out excess juice but will try leaving in bones & skin.

My mother made this occasionally in the 1950s. I loved her salmon patties. She was a simple cook. Her idea of seasoning was salt pepper, and maybe some bacon grease. She kept the canned liquid with the salmon. She crushed the soft bones and broke up the skin and left that in also. Only thing added was 1 egg, flour, and some crushed soda crackers. The crackers still had a variety of sizes ranging from crumbs to dime sized. She used her hands to mix all of it. She fried the patties in a cast iron skillet with hot melted Crisco. I think she made fresh mustard greens cooked with bacon strips, and cornbread ( never sweetened) to eat with the salmon. When I grew up I added yellow onion or green onion. I tried fresh dill, and had to be careful to add a small amount. My children loved the patties served along side of fresh collard greens, and buttered rice that was peppered and had a little salt. I am going to make some today, its been a long time. Ty for the vid.

@@joelove1987 I forgot all about bell peppers, I didn't add them bc one of my children hated them. These days I rarely buy the peppers bc I rarely can finish one. If I plan ahead I will make several things that contain the peppers: spaghetti sauce, macaroni salad, stir fry, seafood salad. Also, I think that by using the entire contents of the can of salmon that you get more calcium and omega 3 fatty acids. I can't understand why ppl remove the skin and bones. Recently I noticed that the grocery store has sardines with the bones removed! I have to wonder what does the industry do with skin and bones. Does it become some expensive food supplement or costly pet food? I wouldn't be surprised.

My salmon patties combine your potatoes in the salmon patty. I boil then mash potatoes coarsely, and mix in with the salmon. It changes the texture of the patties, but I've come to like it. I developed that recipe when I tried to recall how my mom made them, and took my best guess. I don't remember if she used mashed potatoes in her salmon patties or not!

I loved seeing this video. I grew up with my mother making basic salmon patties. Sher was Irish and French extraction. My husband is Jewish and his mother made them, also. He thought they were a Jewish food; I thought they were Irish. I guess salmon patties are an American melting pot tradition. I still make them today now that we are retired although I rarely made them for the kids when they were growing up and I don't know why. The same with meatloaf. I love the old "comfort foods" of the 50's and 60's and these fit that for me.

After forming patties she'd coat them with some dry bread crumbs and then put them in the fridge for about an hour to hydrate the bread crumbs. Good stuff. People today just don't have the glorious food memories we acquired from parents who learned to make do with what they had on hand.

Growing up, my mama made these once a week served with rice and tomatoes and creamed corn...I liked it back then, but now that I'm 59 and mama is gone, I realized just how much I loved it and I truly miss it...and her.

We canned our own fish, I believe it was grouper. Then made patties like you are speaking of with crackers , egg, onion and fried in bacon grease. Then we had white gravy, biscuits and fried taters. OMG, my mouth is watering now! The best from Alabama countryside!

I used to help my mom make salmon patties at least once every 2 weeks. 1 can of wild caught salmon, 1 large egg, half of a white onion diced and sauteed, half sleeve of saltines (that I had to crush up), then salt pepper and garlic powder. We fried 'em up in vegetable oil and served plates with ketchup, french fries, and whatever canned green veggie we had. It would make 4 big patties for our little family of 4 and everyone loved them. Think I'm gonna make some this week since it's been about 20 years since I last had one.

Growing up, almost everyone ate this in my community. Everyone removed the bones back in the 70s and 80s, but most people I know usually leave them in these days. Adapting a classic dish to modern times, I guess.

I make mine like my Mom made, very similar to yours but add chopped onion and leave out the mustard. I used cornmeal instead of bread crumbs too. Very cheap and easy meal. Love to make mashed potatoes with mine.

You have to make some kind of creamy remoulade or tartar sauce for this. I whip up mayo, dijon, and a little pickle juice, with some salt and pepper, maybe some horseradish or cocktail sauce for heat. If you have the time, some finely diced onion and sweet pickle make t even better.

My Wife & I love Fried Salmon Patties, we are both in our 60's and we blind taste test every recipe we can find over the years, we've tried them at every place to eat out that serves them, we've tried Family & Friends recipes over the years, found nearly a dozen or more here on you tube and in books and online, we pick at least 3 -6 recipes to try at a time against my Wife's recipe, we always choose hers as the best, it took awhile to finally figure out why her simple recipe always won out even in a blind taste test, 2 things, it was the fact we used either Lard or Shortening, they changed and added so much more flavor than any other oil or butter that it was the reason, also 2nd, frying them just a tad thinner than everyone else & getting a crispier coating on them, but the Lard & Shortening was the Key.

For people that are on a gluten or wheat free diet : I use cooked rice or instant mashed potatoes in cases like this. I prefer the mashed potato flakes to roll my fried chicken in, great flavor, and a beautiful golden brown finish. Some of the instant mashed potatoes are flavored and that makes what you're cooking even better. PS my mom didn't make canned fish anything except for tuna sandwiches. I had to get a lot of my cooking out of cook books. My parents were raised on ranches so supper was beef steaks, or occasionally pork chops, with pot roast for Sunday dinner that slow cooked while we were at church services. I just wish I could afford to eat like that now!!

Ok, I'm 54 and I grew up in the 70's. My Mother and Grandmother made salmon patties. They did NOT use Italian bread crumbs, nonfat plain Greek yogurt or Dijon mustard, and certainly not cayenne pepper. That's jazzed-up modern nonsense. This is probably a good recipe, but it is in no way an old traditional recipe. No living, breathing person will tell you their grandmother from the 50's or mother from the 70's made salmon patties this way. Not one.

My family was from Mississippi so ours were completely different. Drain Salmon and give the liquid to dogs & cats as a treat along with the skin. Keep the bones and salmon and try to not crush the bones when mixing. Add a couple of eggs, cornmeal and seasonings such as lemon pepper & old bay. Can add minced onion too or not. Fry in the skillet in lard or peanut oil. Yummy!

I just made salmon patties this past weekend. I just use mostly drained canned salmon, two eggs, flour, salt, pepper, paprika, a splash of hot sauce. I don’t roll into Pattie’s. I just spoon drop them in the oiled pan. I drain them on a paper towel. So good! Serve with pintos, coke slaw and cornbread! Southern staple!
