Look at the stars in Frankie’s eyes - that amazing 🤩😍😂 she is my kind of baby💕❣️love Might I say something? 🤩 regarding tofu, you will get the same results to get nice, firm & crispy tofu on outside by drenching it (aka coating it) in cornstarch flour & frying it on the pan with little oil just like any veggies frying. You can brown it as much as you want to. I get the mushroom blanching - Why are you blanching the tofu first & then going through this follow up process? Just curious?

Will stick to my way thanks. Flour will make it soggy when it sits. Answered the tofu in other comments. Thanks for watching

Where can I get a WK towel?.😍

As a mushroom newbie, what is the desired result of pre boiling the lions mane? I use a lot of tofu but have to admit never considered boiling since I press the water out to begin with. Obviously it pre cooks both but just unclear about the step…is it for texture? Or getting it pre cooked before the stir fry. Lions mane is a bit more difficult to obtain in Nashville, I’ve only found in one market so far. Stir fry looks amazing! Knife skills are just mesmerizing…thanks! 🙏🏻
@DerekSarnoChef Жыл бұрын
Try it. It helps make it so it's not oil logged once done frying and added texture. Mushroom grow kits are easy to find check out HIFIMYCOLOGY online

Does the tofu eventually lose its crisp? I noticed you didn’t press the water out after the boil and cool down.

With flour it would lose crisp. No need to press after boiling with salt in water. Just cool before handling.
