Agreed....not everyone understands that using your appliances also requires some or a lot of maintenance in between use. There are good and very bad methods to clean and maintain items which could be a good change for food prep vs. "everything is perfect" in every video.

Instead of griping that Sam doesn't do recipes, I keyed it in here to help Make America Cook Again! Marinade: 3/4 C Olive oil 2 Tbsp fish sauce or anchovy paste 1 Tbsp soy and Dijon mustard 2 Tbsp garlic paste or 4 cloves crushed 2 tsp dry thyme and rosemary Salt and Pepper Juice of one or more lemon. Protein Pound chicken breasts until they're even thickness Score them for texture Store in a zip lock with 3/4 of the marinade for 1 hr in the fridge, 1 hr to get to room temp Grill on high heat while brushing. Nan bread 2-1/4 C AP flour 1/2 tsp salt 1 pack of yeast, 1 tsp sugar, 1/2 warm water, bloomed for 10 mins 1/2 C plain Greek yogurt 1 Tbsp oil Dough hook, mix five mins to a smooth shiny ball. Rest in a bowl covered with a moist towel for an hour Divide into 8 pieces, roll to a pita size, flat top grill until browned with bubbles with a little oil Brush with garlic butter to finish Sauce 1/3 C ea yogurt and mayo Juice of half a lemon 2 Tbsp of garlic paste or 4 cloves crushed S&P, chopped parsley, mix Assembly: Put sauce down, add diced/chopped chicken Garnish with onion, tomato, cucumber

@@ianallen738 The secret to tomatoes (even for non tomato lovers like me) is to get heirloom tomatoes or farmers market fresh tomatoes when in season, slice them and SPRINKLE SALT ON THEM about 1 minute before you use them (always). It makes all the difference in the world. You can use vine ripened tomatoes when tomatoes are not in season.

The factors are season, cultivar, ripeness, and how they were grown (organic in soil vs non-organic vs hydroponic, growing conditions, etc)

I've made this 3-4 times, with the naan and tzatziki. Even broiled and not grilled, it's still incredible! Grilled on some hot charcoals is the best, though. This last time I ran out of yogurt to make the sauce. I ended up throwing together mashed avocado, heavy cream, and a little mayo together in place of the yogurt/mayo. Also added a little sugar bc I put too much lemon juice in it, and used one clove of garlic instead of two bc it was a little garlic heavy last time. Turned out really pretty good!

We make something similar, but I'm lazy so I stop at a local Greek restaurant and buy pitas and a pint of tahziki sauce. grill marinated chicken at home, also make some caramelized onions and chop lettuce and drizzle it with redwine vinegar. Assemble and spinkle with feta. Nobody misses dinner when I make these!

Marinating doesn't work. You can just brush the "marinade" on, use it immediately and it makes no difference to the taste. I mean, scientifically it doesn't work. But you won't believe me, which is cool. Personally I think the taste of Greek yogurt would be great on the marinade, by which I mean the sauce you dress your chicken with. I wonder how these kitchen myths started. I'm guessing that the marinating myth began as an excuse for why dinner wasn't ready yet.

I make a sauce similar to this, except its greek yogurt, sour cream, lemon juice, fresh chopped dill from the garden, good amount of garlic, minced cucumber, S&P...and we mix! Quite delicious and fresh.

@@rEAdyOrN Feta and Greek yogurt work just fine. But taste is subjective. So might be it doesn't for you. I was even thinking a little fresh dill instead of the parsley for the sauce myself.

My neighborhood pub [Moon Time] runs this as a special not as often as I like! Their recipe has Hungarian paprika in the marinade and the dish is called "Chicken Souvlaki" and also has feta cheese which I have to recommend! Great vid Sam!

Sam this is also called a Shawarma in the Middle East. The cuisine in the Mediterranean and the Levant is similar.

Well, I did it. I destroyed my kitchen in the process. My first go-around with the Naan dough didn't work. It never doughed up. I did use a mixer w/hook and ended up adding more flour than the recipe calls for. Second time I used my bread machine and bread flour dough this time. Much better results. Me and dough have a love-hate relationship. Didn't have enough lemon on hand so I ended using multiple packs of crystallized lemon. Worked like a charm. I also didn't have a working grill so I used my Lodge cast iron grill pan. For the Naan, my cast iron round griddle and finished them off over low fire from gas stove burner. Needed a little char. All in all I learned what works for me and what doesn't. Overall, this recipe is hands down the lip-smackiest meal I've made in a loooong time. Thanks Sam and Co.
