Shepherds Pie Recipe below: Since the good folks here don't do recipes and I need them, I figured I should help Make America Cook Again and share it. Easy Shepherds Pie from STCG 1 C of frozen carrots and pea in a warm cast iron pan Add a lb of Ground beef/veal/pork A little salt and pepper Add minced garlic to taste (bloom in the center of the pan before mixing) A a tbsp of tomato paste from a tube (easy to store.) Add 1-2 C beef broth Add a cornstarch slurry (Tbsp water and corn starch) Simmer til thickened Top the cast iron with store bought mashed potatoes Garnish with paprika Bake at 350 for 15 mins

Alton Brown debunked that mushroom myth back in 2000 on the Fungal Gourmet episode of Good Eats. J Kenji Lopez-Alt also did tests with it only adding about 1% water to the mushrooms, which only takes seconds to evaporate at temperature. It’s unnecessary to keep pushing out of date ideas, and with the prevalence of food-borne illness and deregulation running rampant right now, it might be a much better idea to wash and add a bit of heat time. The old ways are not always the best ways.

From what I had learned in my food safety class is that you should wash your mushrooms if they're still whole, but do it right before cooking or else they will get slimy. If they are pre sliced, do your best to wipe any dirt or grime on the mushroom and maybe do a quick sprits of water with them in a colander then quickly pat them all dry with paper towel.

As a former "produce guy", almost anything can end up in the floor and into the rack, especially the freaking strawberries, those stupid containers are junk and split open every chance they get. You really should wash stuff anyways, it's probably been in dirtier places than the floor before it was even packed and delivered to the store.

The thing is, most of these farms are using some kind of illegal labor and not providing adequate, available restrooms... so... where do you think they poop on massive fruit and vegetable farms? Yep. In the middle of the field. Wash your fruits and vegetables. At least rinse them (even mushrooms - rinse gently and drain on paper towels at least).

Philly Spring Rolls recipe below: Since the good folks here don't do recipes and I need them, I figured I should help Make America Cook Again and share it. Philly cheese steak spring rolls from STCG 1/2 C ea Diced onion, green pepper 1 C creminis all diced. Soften in fying pan. Add a pound of ground veal, beef, or diced rib eye Add dash of salt and worchestershire. Finish cooking. Get some provolone slices, cut into strips. Spread a spring roll wrapper out. Fill with 2/3 Tbsp of meat and some cheese, roll like a firm burrito Seal edge with a wetted finger. Set on to a parchment lined sheet. Coat the prepared rolls in olive oil Bake at 350 for 20-25 mins

So they would make some sort of meal out of the scraps of the Sunday joint and the vegetables they had in their kitchens. What they came up with was a minced beaf dish with mashed potato on top, and it was just called 'Cottage Pie' for ease of reference.

Have to disagree on the mushroom myth. Alton Brown covered that on an episode of Good Eats (season 8, episode 15). While mushrooms will absorb a tiny bit of water it is an insignificant amount.

Hey Sam did you know that traditionally shepherd's pie calls for chopped or minced lamb? And I've read that chopped or chipped beef can be used as a substitute and it still remains a shepherd's pie. However once ground beef joins the party in lieu of the minced lamb, then the name of the entree officially changes to what is known as, drum roll please, Cottage Pie! Just an idea though my friend. Next time ya make Shepard's Pie? Try doing it all almost exactly the same way you've done it here. But get this! Invite a pie crust to the dance! LORD HAVE MERCY!!! I changed the whole dynamic of the dish while miraculously keeping it the same! LEGENDARY!

The produce guy just didn’t want to argue with a know-it-all for $10 who was wrong in the first place. You have to wash your mushrooms. Even the old school chefs used to, they’d use a wet brush and not run them under water. But as many people have provided several cooks like Alton Brown and Kenji López-Alt have debunked the mushroom myth. Unless you like literally eating dung.

Sam, I've been watching you since Channel 4 in Vegas - when was that? I love most everything you do. Today, though, you've crossed a line. I'm from New England. Grilled lobster? Really? I don't really care; sounds yummy. You finally made my absolute favorite food from my childhood. My husband makes it for me when I'm feeling down. We called it fried pbj. Greatest food EVER!

Ohhh Sam...two things you NEED to know... 1) mushrooms don't absorb water from being washed and it's the ONLY way to make sure there's no grit. 2) SHEPHERD'S pie is made with mutton or lamb...COTTAGE pie is beef. You're welcome.😁

@@KryzMasta except it's not a myth... if you dont believe me use a scale, weigh your mushroom, wash it, wipe it dry, then weigh it again. Let me know how it works out because I honestly dont know but sam knows more than me so I'm taking his word on it

bailey he probably isn’t getting minimum. Most jobs like stop and shop, have a union. I know it sounds crazy but probably has something extra not just minimum. Also when working it doesn’t matter your pay brotha. Always care about your work. Practicing not caring based on a wage will transfer into whatever other job you get for good money
