Sausage Mushroom Rice Casserole
1 pound Sausage
2 Tbsp. Minced Onions
1 Tbsp. Minced Garlic
1 Tbsp. Parsley Flakes
2 tsp. Herbs de Provence
1/2 tsp. Red Pepper Flakes (optional)
1 tsp. Paprika
1 tsp. Salt (1/2 tsp. If not using low sodium broth)
1 tsp. Pepper
8 oz. Mushrooms, sliced
1 cup Carrots, chopped (optional)
1 can cream of celery or mushroom or chicken Soup, undiluted
2 cups Broth, chicken or vegetable
2 Tbsp. Worcestershire sauce (optional)
1 cup Rice, long grain
1. Preheat oven to 350 degrees and spray a 2 qt. Baking dish
2. Cook & crumble sausage and add spices
3. Add mushrooms and carrots and cook for 5-8 minutes
4. Add rice & stir well
5. Transfer to baking dish
6. In a bowl, mix broth, soup & Worcestershire sauce and whisk together
7. Pour over meat/rice mixture in the baking dish
8. Cover tightly with foil and bake for 1- 1 1/2 hours, checking it after 30 minutes to see if it needs more liquid. If it’s getting dry, add water or broth.
9. When you remove it from the oven, let it sit down at least 5 minutes.
