My daughter has made a version of scalloped corn for years. She does not use cheese. She uses whole milk, creamed corn, whole kernel corn, eggs, chopped roasted red peppers, onion, butter and saltine crackers. Bakes it and it is always a hit on the holiday table.

My family has been making scalloped corn for at least 50 years. It is the only reason my adult kids care at all about holiday meals, LOL! If I were to fail to make the "corn casserole," as we have always called it, I'd have a mutiny on my hands 😂The recipe my family has always used (which came from the generation before mine in our family) is titled, "Cheesy Corn Scallop," and the secret is: to add a teaspoon of mustard and a can of Mexicorn. We don't make it exactly the way you are doing it here (I melt half a stick of butter in a pan on low heat, then add milk (not half/half) till warm (that's when I stir in the mustard), then whisk in the egg (which I have already beaten before adding). The rest is basically the same as the casserole recipe you have listed here (though our recipe calls for adding in about 1.5 slices of bread, broken into 1 inch chunks after the corn is added, about 2 TBS of flour (which I put in after the egg, and I only add 1 egg because otherwise it tastes too "eggy" to me, personally. Oh, and I also use a tsp of baking powder at the same time as the flour). Seriously...mustard and Mexicorn. It's been in our family for at least 5 decades and it makes the BEST scalloped corn! Merry Christmas!

A nice twist to this casserole dish could be to add some orange and red bell pepper diced chunks. This is just to add some color more than flavor. Red orange and yellow bell pepper, as you know has a very mild flavor!
