If you are a fan of the oooey, gooey, cheesy, goodness of mac and cheese, you will love this video and my recipe. I use three kinds of cheese, four if you count the parmesan on top. Ingredients:
1 1/2 cups elbow macaroni
pinch salt
1 1/2 cup Velvetta cheese, cubed
1/4 cup mozzarella, shredded
1/4 cup cheddar, shredded
1/4 cup colby jack, shredded
1 cup half & half
4 Tbsp butter
sprinkle of parmesan
Enough of the three cheeses to sprinkle on top dish
Directions:
Preheat oven to 350 degrees. Spray an 8X8 baking dish with non-stick cooking spray. Boil macaroni with a pinch of salt until al dente, about 10 minutes. Drain, do not rinse. Add noodles back to the pot. Place back on stove top. Add cheeses, except parmesan, and half and half. Reserve some of the cheeses for top. Stir well until cheeses have melted. Pour into baking dish. Sprinkle with the three cheeses and parmesan cheese. Bake 350 degrees for 15 minutes.
For a twist, add chili on top of macaroni in your bowl, sprinkle with finely diced onions if desired. Enjoy!
This recipe can easily be doubled.
