These three recipes show how to preserve tomatoes for the winter. If you love canned tomatoes and vegetables, you should definitely try these recipes. A delicious way to preserve tomatoes for the winter. In winter you will have a wonderful tomato salad with delicious spices on the table. This recipe has become one of the favorites in our family. Recipe 1:
Ingredients and preparation:
2.3-2.5 kg tomatoes
Cut the tomatoes into 4 pieces
6-7 garlic cloves (2 cloves per 1 glass)
A bunch of dill
A bunch of parsley
Use the stems, don’t throw them away
400-450 g onions
I use 1.5 liter jars
Place 1 garlic clove in the bottom of the glass
Black peppercorns
Boil the drinking water
Pour the boiling water into the jars
Close with lids
Leave to stand for 15 minutes to allow the contents of the jars to warm up
After 15 minutes, pour the liquid into a saucepan
For this I use a special sieve
Now the marinade should be boiled again
For a 1.5 litre jar: 2 teaspoons of salt (18 g)
2.5 tablespoons sugar
1 tbsp odorless refined oil
Bring the marinade to the boil
Stir well to dissolve all the spices
Add 25 ml of 9% vinegar to each glass
Pour the boiling marinade over the tomatoes
Screw the jars tightly
Turn them upside down to check for leaks
Cover with a large warm blanket and allow to cool completely
Shelf life of one year at room temperature
Recipe 2:
Ingredients:
For two 1.5L glasses:
Approx. 1600g tomatoes
1.5 L water
15 garlic cloves
Marinade:
For 1.5 l water
1 ½ tbsp salt
4 ½ tablespoons sugar
For a 1.5L glass:
5 pcs. Black pepper
½ teaspoon mustard seeds (optional)
3 to 4 teaspoons of garlic (less can be added)
6 teaspoons 9% vinegar
Pour in boiling marinade
After cooling, store at a temperature below +25°C
Recipe 3:
1.7 kg cucumbers
400g onions
1 hot pepper
A bunch of dill
A bunch of parsley
1 garlic bulb
2-3 tablespoons coarse salt (adjust to taste)
1.1 kg tomatoes
720ml preserving jars (6 pieces)
Bay leaf
Some black peppercorns
1 teaspoon of sugar in each jar
1.5 tablespoons apple cider vinegar (5-6%)
Fill the glasses with boiling water
A pot with 50-60°C hot water
After boiling, sterilize for 15 minutes

This may be simple dishes yet I believe that it can be tasty dishes. The senior citizens from our community will truly enjoy this as many of them will be reminded of a time when time was harsh yet everything was simple. Visiting homes as a child, I would often encounter different kinds of preserved vegetables, fruits and meats and one of the most favorite preserves in our community, since it was the most abundant ingredient, was green mangoes. When asked why they preserved their produce with different ingredients, they always reply that preserving i.e. mango with other vegetables is a good way to meld the flavors of the ingredients for storage and without fear of not having something to eat. My late grandfather on the other hand fancies preserving different vegetables and fruits. If he were alive today, he would have loved making this preserves along with other preserves shared by this channel.

Ma grand mère à toujours conservée des légume d’une façon bio et naturelle sans ajouter aucune goute de sucre Moi personnellement j’aime pas le sucre dans mes aliments Puis cette méthode est utilisée pour conserver des aliments qu’on a pas durant toute l’année ou qu’ils sont dur à préparer comme la salade méditerranéenne ( piment grillée avec tomate grillée ) ou des légume de saison Pas pour conserver une salade je fais le tour au marché et j’en ferais milles 😂😊

Looks great🥰... Couldn't find your jar sterilizers in the US, so I use a two tear vegetable steamer that the baskets bottoms is removable, works perfect.😁
