Recipe 1:
Ingredients and preparation:
2.3-2.5 kg tomatoes
Cut the tomatoes into 4 pieces
6-7 garlic cloves (2 cloves per 1 glass)
A bunch of dill
A bunch of parsley
Use the stems, don’t throw them away
400-450 g onions
I use 1.5 liter jars
Place 1 garlic clove in the bottom of the glass
Black peppercorns
Boil the drinking water
Pour the boiling water into the jars
Close with lids
Leave to stand for 15 minutes to allow the contents of the jars to warm up
After 15 minutes, pour the liquid into a saucepan
For this I use a special sieve
Now the marinade should be boiled again
For a 1.5 litre jar: 2 teaspoons of salt (18 g)
2.5 tablespoons sugar
1 tbsp odorless refined oil
Bring the marinade to the boil
Stir well to dissolve all the spices
Add 25 ml of 9% vinegar to each glass
Pour the boiling marinade over the tomatoes
Screw the jars tightly
Turn them upside down to check for leaks
Cover with a large warm blanket and allow to cool completely
Shelf life of one year at room temperature
Recipe 2:
Ingredients:
For two 1.5L glasses:
Approx. 1600g tomatoes
1.5 L water
15 garlic cloves
Marinade:
For 1.5 l water
1 ½ tbsp salt
4 ½ tablespoons sugar
For a 1.5L glass:
5 pcs. Black pepper
½ teaspoon mustard seeds (optional)
3 to 4 teaspoons of garlic (less can be added)
6 teaspoons 9% vinegar
Pour in boiling marinade
After cooling, store at a temperature below +25°C
Recipe 3:
1.7 kg cucumbers
400g onions
1 hot pepper
A bunch of dill
A bunch of parsley
1 garlic bulb
2-3 tablespoons coarse salt (adjust to taste)
1.1 kg tomatoes
720ml preserving jars (6 pieces)
Bay leaf
Some black peppercorns
1 teaspoon of sugar in each jar
1.5 tablespoons apple cider vinegar (5-6%)
Fill the glasses with boiling water
A pot with 50-60°C hot water
After boiling, sterilize for 15 minutes
