Your stories might not be interesting to you, but it might be to someone else. The key is to make the essay about you. Why do you like what you like? What are you passionate about? Start there.

Yes, but your main focus should be your high school years, since that is more recent and they are the years scholarship committees will be interested in.

You can but it isn't recommended. Readers want to learn more about the student. A quote usually isn't personal enough and it uses up precious word count.
