I am so glad that School of Wok made another Vietnamese dish! we eat this salad very often. I sometimes roll it up in a rice paper and dip in nuoc cham.

Low and slow is chickens friend. Those shallots fried look awesome. I actually go low and slow on chicken then take them to the grill for extra level of high heat goodness at the very end. Use that chicken broth for the noodles.
