@@scottnra I can't agree enough. Our 200-year old wooden barn/garage was saved by a nearby fire extinguisher when an engine fire occurred from a battery wire insulation failure in an old Volvo station wagon. Now I keep them in the garage, kitchen, main living area and in each car.

As a retired Quality Engineer, I prefer checking measuring instruments near the temperature they are intended to measure. Some measuring instruments are not linear. It does not really matter if the probe is off near 32° but you want it pretty close in the 165° - 200° range. I wish you well.

mcconn746 I get it. At these temps and for cooking one or two degrees isn't going to be a disaster of course. The only two things most home cooks have to test temps with a known value is ice or boiling water. Kinda hard to get boiling water to stay at 212 long enough to run it outside to the smoker to check the probe haha. Thank you for watching! @@scottnra I understand the difficulty in this case. I would probably take the smoker near the stove and still test it in near boiling water. Also, water boils below 212° unless you are at sea level...theoretically 208° at my elevation but you are right a few degrees do not matter. I had a similar food probe that worked well for over a year. All of a sudden it read 170° in boiling water. I now check mine at least annually. Good video. Thanks.

Use a 50/50 mix of apple cider vinegar and water. i spray mine down after every use and scrub some of the buildup off all internal surfaces including the window.

You are 100% correct about their customer service. I had one for about 6 years and the heating element went out in it. I called them up to order another one and they sent one free of charge but it wouldn't fit because they had changed them. So I called them back and they told me that they didn't stock parts for that model any more so I said thanks anyway and hung up thinking it was time to buy a new smoker. The next day, I repeat, the next day, FedEx pulls up and I'm thinking, I don't remember ordering anything. Low & behold, the driver unloads a BRAND NEW smoker. Again, they overnighted it FREE OF CHARGE. I'm sold on Masterbuilt. If I need it and they make it that's what I buy.

I just had a buddy settle up a debt with me....and now i have used example of this unit. I cleaned it up and it seems to have all the pieces to it.... with exception of the remote. I plugged it in the other day and with in 10.minutes it was coming up to temp and also was full of smoke..... guess there was a few chips left in the tray. Since I don't have an orginal manual with it..... what do you suggest on cooking a chicken....."temp...time...and how many times do I load the chip tray" and also some question on ribs. About 4 videos in on information on how to use masterbuilt smoker and after being told to soak the chips hearing this fella say not too I emmediatly drained my bucket. What you said made sense to me. I like your taste in beer and I like the cut of your jib mr. I've always used offset charcoal grill for smoking so this will be my first electric smoke. Sirloin tip roast. Wish me luck. Notice there's a pretty long cord on that one. You think a eight foot extension cord would be OK? My outside outlet aint working. Mommas afraid to do this in the kitchen. She's whining"You gonna burn the trailer down"!

I agree. I tried soaking my chips in my Masterbuilt smoker to make my chips last longer...but I didn't get enough smoke. Dry chips is the way to go for this smoker. Also....throw the Miller Lite away.....drink some good craft beer! :)

Have the same smoker, a little light on getting smoke to the meat so I added a pellet tube. And can use the pellet tube to cold smoke anything.

Just got one of these for Christmas and I’m having a lot of fun with it. How long would you smoke various pieces of chicken (bone vs. boneless)? Also, how often would you refill the smoker chips if you aren’t soaking them?

Robert Busek Good Questions. I think chicken is easy to over-smoke si Would not add chips very often at all. Maybe just once or twice. This things really holds it in and birds are not forgiving with smoke haha. I advise to always cook to temp more than time. For chicken and turkeys 160 at the breast/180 at the thigh. Use your probe for one or the other and you should be good as dark meat cooks faster. Thank you for watching! Right on with the chicken...”low and slow” is not the way to go. As a matter of fact, sear it first on a grill or skillet about 2 minutes each side...then smoke it at 275...PERFECT!! It will literally burst with flavorful juices!

Great tips, Scott. Not seeing much about 'seasoning' here. I didn't season. Started smokin' a butt the day I got it 2yrs ago. Came out great. IT 180* for slicing. What are your thoughts on seasoning?

I think you really should run it for a couple hours to remove the production, oil and metal flavors but other than that, I'd say you're good to go. Seasoning is in the manual. Rolls like a Hand Truck. There are wheels recessed in the back rear and a handle on the back. Tilt it over backwards a bit and it's on the wheels. Rolls very easy. There is a review video on it showing it rolling on the channel as well if it helps. THanks for watching!

I just did my first cook on new Masterbuilt 30" digital smoker. Loved the result, but experience was less than excellent. I set up to smoke two ~4 pound pork butts, expecting to smoke at 225 degrees for about 8 hours. I started watching internal temperature at about 5 hours (135 degrees) but at 8 hours it was only up to 165, and not going higher. I was expecting to get to 195 to be done. I pulled the butts out of the smoker, wrapped them in foil, and finished the cook in the oven at 325, took another 1.5 hours to get to 195. Like I say, finished product was great, easy to pull into the right size pieces, tasted good with a nice bark, but I'd like to be able to finish the cook in the smoker. I should add, outside temp was about 40 degrees. I'm guessing I should have set temp higher, to compensate for low outside temp. Is there a formula, like 280 - outside temp for recommended smoking temp? I see there is a blanket available, is that the answer? Use below __? (50?)

Actually what you experienced is normal. It's called "The Stall" where meat stalls at around 165 due to evaporation of it's moisture. Once you get to a certain moisture level the meat again begins to raise in temperature. Most people will wrap with foil at 165 and put back on the smoker for this reason. Another thing you can do is what you did; POWER through the stall with temperature! When you put it in the oven set at 325 that's what you did. If you had wrapped and out it in the MES at 275* you would have had similar results thought probably a little longer. Obviously you don't need to add any chips once it's wrapped. Do yourself a favor and order this book. This is the best all-around BBQ book IMO. You'll learn all the basics and even how to make your own rubs and sauces! amzn.to/2gZkzMw Thank you for watching!

my friend! when you were wiping down the glass, i thought i saw meat sticks in your smoker. i have been wanting to try making these, but the cook cycles i have seen start crazy low, like 110 degrees. i can't get this low heat with my charcoal smoker. does the masterbuilt work well for this? this is actually why i clicked on your video!

YES! I frequently run mine at 100* to get a low smoke cook started. Just remember you need to be using cured meat with nitrates for health reasons when doing so. It does not make smoke well at low temps especially during the summer. you'll need a Wedgie or some other smoke source for that. (There is a review on here for that as well as shown in the cheese smoking video) My bologna cooks start at 100* and go up to about 180* cooker temp over about 16 - 18 hours! brian bass Well first I am biases as I like jerky made from ground meat much better. Jerky guns are fantastic but kind of a pain in the ass to fill without using a sausage stuffer. Interesting take on the chicken. I was told 225 for 2 hours was good for thighs, I'll have to try the 275 next time. Also glad you confirmed no to smoke the chips, it doesn't make sense to me either. How often do you clean the inside?

AkeemKN Not very often. THe glass gets wiped down during every cook when it condenses to keep it clear, but the inside gets scraped out maybe one a year. Thanks man and thank you for watching! Even with a charcoal or stick burner, to make ships smoke and not burn up make a foil pack and poke one small hole in it. Starving them for air makes smoke and slows the burn.

You should soak your chips, but what everyone neglects to do is you should let them season (dry out on a towel) for about 20/30 minutes after soaking them. If you do this properly you will get more blue smoke and less of the harsh smoke that makes your food bitter, not to mention dry chips will almost immediately gasify and add bitterness to the food, and could possibly explode (I've demonstrated this a few times -- it does happen).

Great video. I've never smoked before and was pretty much set on getting a Weber Smokey Mountain. However, after watching this it seems like the electric Masterbuilt would be a better choice for my lack of skill. What are your thoughts?

The WSM has won a lot of comps and is a great smoker. It requires a lot more to run though. I have several cookers and use some for specific things that they are best at, in my opinion. The MES is a GREAT product and makes smoking good food easier. I use mine mainly for fish, sausages, jerky, bologna, and things when I want to set it and forget it.. I can't say a thing bad about a WSM, as I've never had one and know many people swear by them, but I do know that My MES has been great and a lot of fun to run.

Scott Gregg thanks for the reply. I ended up buying a 30 inch Masterbuilt DES at Lowe's yesterday as it was on a pretty good sale for the 4th of July. Getting ready to season it right now! I think I'll start with some ribs or chicken.
