Well another fine video. I got to be honest I’m 54 been married 30 years and fishing and shooting since I been old enough to wear long trousers. But Iv never cooked never had to. But since I been watching your videos (Hannah) iv been having a go at cooking,some good some bad lol. I really enjoy it wife doesn’t like the mess I make. My father caught a large bass and I cooked it having done the gutting descaling and trimming, I cooked it for my grandparents with lemon & butter and tasted it. It was perfect I served it with new potato and peas. This was all done within 2 hours of catching it. I asked my grandmother what she thought of it to which she replied "Its a bit fresh". There is no pleasing some people. Now I like the taste of bass and having never eaten John Dorey I can't do a comparison, but I would think John Dorey must be exceptional judging by the comments in the kitchen. Great video and demonstration I will definitely try the roast potatoes they looked great. Thanks for posting.

Ah, a Dartmothian! Not far from me. A great mate had a flat in Duke Street for quite a few years. Many great nights out over there, sleeping on his lounge floor. Only sad memory is we were there the day Princess Di was killed.

@@TheFishLocker Jim is so relaxing to watch. 15 minutes of a Jim cook video has about the same therapeutic effect as a bottle of wine, a hot bath and a massage from a scantily clad Asian girl. That has however just brought me the unfortunate image of Jim saying "You want happy ending you gimme five more dorra" which has weirded me out considerably, lol. I can imagine if a storm blew up outside Jim would just go to the back door and say "Hush now please, we're trying to cook a bass in here" and 2 minutes later the sun would be back out.

I'm always impressed how efficient a chef is. In this case preparing the dressing while the fish is cooking. Getting the potatoes in early so they finish on time. Great job to all involved.

It looks wonderful. Generally I stuff the fish with some chopped leek and maybe a little fennel, wrap it up it up in tin foil (this saves some washing up of baking tray. The potatoes looked particularly nice. I use the back of the knife when scaling bass.

Absolutely stunning and something we could all cook. For any fish that needs dealing I use a cheap wirebrush due to arthritis not allowing me to trip a knife to do the job, and with a bit of care you don't damage the skin of flesh. Looking forward to the next catch and cook.

As for the veg John I always Blanche mine and then freeze it straight away that way nothing is ever wasted. Especially broccoli which goes yellow very quickly. Just checked it out Is ifca regs here where I live as is a conservancy. Otherwise two bass a day can be caught. Also have a bizarre rule that we can’t use sand eels as bait. As a fisherman and a chef I love the vids. Keep doing what you’re all doing.👍🏴☠️🏴☠️🇬🇧🇬🇧

When we had a mess fish to descale we used a pressure washer ... Do a smoker load in a midget minute ... Never stuffed with butter ... I use mayonaise ... Also thin slices of lemon or orange depending on the fish ...

I love your show mate I'm in Australia an that bass looks alot like our Australia salmon witch not many people eat hear but I will be keeping one to try next time I get one .. mind you I do like the taste of mullet

Hahaha! I KNEW from that look in your eyes when you boated that Bass (and I said in the comments for the last video) "that could be heading for Spargo's kitchen"! Great upload thanks John & Jim - the Bass, spuds & beans all looked superb. Nice to see Jim up to his usual "capers"!! Useful tip about the coarse sea salt with the Garlic cloves too. - This is one of those things that really makes me roll my eyes about anglers in the UK. Getting triggered about Bass vs Seabass is just ridiculous. Considering it is a bass from the sea. Every other country in the world knows them as Seabass and even the European fisheries authority classifies them as European Seabass. Lets just agree to be specific. Its a Sea Bass. 😊

The spikes that you cut off will come out easily and completely after the fish is cooked. It works here in Canada lol just cutting up. So love your videos keep up the awesome work.

Gday mate , down here in Australia we keep a teaspoon/tablespoon in tackle box just scaling fish , removed scales with ease an dont damage / blunter your knife Great vid mate Jase / Australia

Hello John. Looks mouthwatering. You say you wouldn't want to kiss anyone afterwards. Here is a quick tip. Cut each clove of garlic in half and remove the green shoot from the middle. Then chop as usual. It greatly reduces garlic breath. All the best.

- I agree, the scaling is easier when the fish is whole but I needed to gut it ASAP and wasn't able to film the scaling until the following morning.

i clean same way but stuf fish with herbs and stuff and garlic butter then wrap in tin foil put in oven 30 min 200. then put on barbie when needed for 10 min to heat up .so you can cook freez and use over longer winter.
