Your father-in-law has astonished me by mixing chorizo with the squid or chickpeas. Here in the Basque Country we cook them in many various ways, but the most popular and truly delicious is with sauce made with their own ink; very few ingredients and a spectacular flavor. Greetings from Getxo.

Great Vid and you can tell Jim really loves being in the kitchen and is passionate about cooking. Squid is one of my favorite seafood and love cooking it up fresh after catching it.....those long tenticles which they grab there food with we call "the candles" and they are sensational to eat. Nearly fell off my chair when they went into the discarded tray. They are sweeter then the other tenticles and delicious

Jim always amazes me, no matter what species you present him with he knows in an instant the dishes he will make and the ingredients needed. I guess that's the difference with him being a long time chef and not just a cook. He also always produces two or three dishes and not just the one. Great stuff.

Yum! I love squid. Wish I could catch some of those here in sweden, we do have have a bigger version here, but they're not as good eating in my opinion... I really enjoy these catch and cooks, seeing someone else cook is like listening to jazz, it gives me ideas and inspiration;)

This reminds me of my late brother, who was a cook in Provincetown at the tip of Cape Cod. I still have a cookbook that one of the local cooks wrote that featured recipes from the local Portuguese fishermen who were still around in the mid-20th century. There's a squid stew recipe that was featured that I got up the nerve to try. Red wine, tomato, hot pepper, diced potato and of course squid. It kicked like a mule and stunk up the house, but it tasted fabulous. I haven't had it in decades, but this reminded me of it, and of my brother in his cottage in Provincetown.

Love all the cook ups on the beach, but especially look forward to Jim cooking!! No nonsense straight forward cooking... I've learnt how to cook my wife a good risotto from Jim and his little tips he gives - thank you for that. My personal favourite way of eating squid is, just scored then cured using lemon juice. (Only the smaller ones though)

In some ways Jim reminds me of my grandfather, who could barely cook an omelet but had similar mannerisms in both movement and speech. He was a police officer and passionate hunter, taught me both to respect nature and how to survive in the wild (among many other things), I hope I'll have the patience to pass all that to my kids.

Thanks Jim and John and belated birthday wishes. The quill or Gladius (Sword) of the squid supports it's elongated body. The soft bodied cephalopods are very short lived but noted, especially the octopus, for their intelligence. The ammonite fossils you found had cephalopods living inside and protected by the outer shell. Nautilus sill live today in similar form. One way I enjoy squid is to stuff the body with a crab or fishcake mixture and then bake. They are a marvelous creature and a sustainable food source.

I love fresh squid but won't buy it from inland sources, as I want it fresh not days old. As usual, the finished article looked awesome, made me hungry. Great stuff guys, keep it up please.

You are right in that. Fresh is definitely best, but fresh frozen doesn’t detract. So if you can get some good quality frozen that’s very good too. 👍🏻

Hello from Prince George BC Canada. I've rather enjoyed watching you and your family fish and cook seafood.......I'm so jealous! Where we live is a minimum of 8 hrs travel to reach the ocean(Pacific coast) . The fishing in this area is mostly lake and river......ice fishing is a thing here too. There are so many regs to obey around here it can get quite expensive to simply go fishing. But these help keep stocks up and healthy......and not extinct! Types of fish range from salmon, steelhead( ocean going trout), kokanee ( landlocked salmon) to rainbow trout and white fish, most are decent eating too. Thank you for what you do! I've found it therapeutic. Keep doing what you do!

The hard, shiny, transparent part of the squid (as seen at 6:19 ) is called the Gladius (cause it resembles the shape of an roman short sword used by gladiators). It’s the part of the squid that will stay around for the longest (the oldest one found was ~150 million years old) cause it’s made of the same substance as the exoskeletons of insects (Chitin).

the tentacles at the mouth are usually just tentacles, while the long ones are arms. I think a mayo with some lemon and dill would go good with some squid, cuttle, whitefish as well. A nice prosecco would go great with the spicy smokey risotto. A lovely video as always, love how everything is tied together, yet you have fishing, foraging, cooking, family time videos, such a plethora of different things, everyone is bound to enjoy some videos. All the squid I have ever tasted was like trying to chew rubber, I am going to try the way you do it Jim I like the look of the battered squid after all I am Scottish and yours looks bloody nice, so Thank you so much Jim, and John, I do love to cook.

I never miss a Jim (Spargo's Kitchen) video, hes the MAN!!!! this one was awesome, I could just taste them Squid Rings with the 2 mayos... why you guys where eating them! Looked amazing! Happy Birthday Jim and keep bringing the catch and cook videos please John!!!

well done gentlemen , another entertaining and educational video. a very colourful set of simple dishes , you can almost hear the cicadas and smell the citrus groves of the Mediterranean regions.

The squid rings in batter were exceptional. That would go well as a starter with any dish.

I'd love to be in a position to catch and cook my own squid alas, but I often go down the supermarket sourced root and do the rings , my boys love it. I also do an alternative with a breaded version and I spice up the crumb with smoked paprika.

Lovely! Some call the Chitinous backbone a pen, some a quill. Do not waste the ink! it is full of flavour. Try it in the marinade... It is sold in sachets. It is what is used in Italy to make Pasta- Pasta Nero. Jim a belated happy birthday, I do love watching and listening to you in the Kitchen. Perhaps John would like Chorizo made with mild Pimenton (smoked paprika)? Chilli is worth persevering with, my wife had much the same reaction to chilli John, but she persevered now she likes her curry's Madras heat! If you take say Habanaro chilli's and remove the capsule and seeds then soak in cold water over night they can be salted then kept a few weeks in olive oil, this way you get a little of the heat but most of the flavour..
