Hi Food Tubers! Jamie’s got a delicious seared tuna recipe to show you - full of flavour and really quick and easy to make. With a crispy sesame seed coating and a divine ginger and soy sauce dressing this dish really hits the gastronomic spot. Served with garlic chips and a sprinkling of fresh chilli and coriander you’ll feel like you’re dining out while kicking back at home.

Soak the garlic slices in clean water for few minutes, so they will not get burned easily when you fry them.

Wow, can't believe how dull that knife was that cut the chunks into pieces. I'd pay at least $1.50 for a plate of a few tiny pieces of yellow fin, (Ahi Tuna) which I cook all the time on cast iron. Mine is much rarer than his and my hair looks better.

I love you Jamie, I really do. But your garlic chips are way too black, it'll be bitter like that! Always stir it while it's in the oil so that I wouldn't burn quick and remove it just before it turns golden brown because it'll continue cooking even after you remove it from the oil!

IMO that is the most boring fish I've eaten so far (the natural flavour of the fish). Tuna on #1, followed by Seabass on #2 and English Sole on #3. The latter one is great just fried in oil and finished with butter, but smoked - you'll eat your fingers with it!

The garlic chip is kindna burned. I would recommend to use the slicer so all chips will be the same thickness (the end parts can be mashed and put in the sauce/dressing). Fry with low heat and when the edges start to turn golden brown, take it out and put it on the paper towel. This way it will continue to cook the chips and it will be all golden brown and crispy. I did that in big batch and keep in the jar then in the fridge (or freezer even better). This method is good with shallot as well.
