I don’t know if anyone noticed, but the kitchen with the roach on the floor had a residential gas line hooked up to the salamander. I own a small chain of restaurant/bar that specializes in southern cuisine which includes seafood and steak, so we use salamander for several of our dishes. And if a reach temperature gets higher than 45* degrees F that can cause bacteria pathogens. Reach in coolers temp should be between 32* F no higher than 42* F. I understand in the summer, kitchens can get hot especially with convection ovens running and fryers but if you keep up with the maintenance of all your reach in coolers and freezer the less likely of shut down. Walk in coolers and freezers especially need maintenance, we don’t have walk in freezer in any of my establishments because we serve fresh organic food. But if you’re going to have walk in’s you need a preventive maintenance program, especially for your ice machines and soda dispensers. We don’t open on Monday because we do a deep clean, I have vendors that come in and clean my restaurants once a week on Monday. Sundays after service is over, my staff goes through all of our produce and meat and we donate the food to homeless shelters and Second Harvest. This is why my business has been very successful, because I had a plan once I retired from being an attorney/litigant. When I started getting investors interested in my business, I gave them a ten year plan. Most restaurants and bars that fail never have any business plan, they think if they open patrons will come. It doesn’t work that way, I planned my first venture including the area where I wanted to operate and the average rent per commercial real estate in the area. I visit US CENSUS to get a look at the average salary of residence in the market. It literally took me two years to open up my first business venture. Our average slow night we have an occupancy rate of 60% percent and on our slow nights we have increase in takeout than dine in. So I staff up our takeout wait team more than our busy nights so our wait staff can still take home good money. We also pay our wait staff hourly, and the tips is an added benefit so our staff can give our patrons the best service possible. I hope someone who’s interested in starting their own business read my comment carefully, if you have questions I’ll respond as quickly as possible

I always believed John Taffer was more aggressive than Gordon Ramsey. John Taffer works in a more dangerous environment, and with drunk people so his aggression is much needed. John Taffer has literally fought a Bar Owner and has threatened to fight someone else before that. John Taffer overall has more built up aggression and a temper than Gordon Ramsey does. Gordon Ramsey only has more shows, but if John Taffer had more shows people will see John Taffer is definitely more dangerous than Gordon Ramsey.

These are the reasons why I have very high standards for quality control for food, drinks, etc. I ask customers how is the food for a reason, because I want to make sure that the food is excellent, up to high standards and make sure that we are honest with our customers, because if everything is excellent, then customers will return to the establishment and if not or customer service stinks, they will not come back. I have a saying that if I am disgusted over the food, drinks, etc. then I would never serve the food, drinks, etc. to the customers, because I don't want to make customers sick.
