Ive worked in kitchens off and on for twenty years or so and I can tell you one trick. Handle raw food with your bare hands. then when you put it on the grill/in the fryer; wash your hands and then put gloves on. My logic behind this is that if you have gloves on when you handle raw meat, you might forget to take those gloves off. But if you handle raw meat with your bare hands, you are not forgetting to wash your hands. There’s just no two ways about it. You’re going to wash your hands. and then the gloves go on to handle the cooked product.

I've worked in restaurants/bars on and off for almost 10 years. The most recent restaurant I worked at had a rat problem. They would poop ALL OVER the racks of clean glasses. The other servers wouldn't so much as rinse them off before dunking them in the ice (which you're not supposed to do anyway). There was literally visible rat poop on the glasses. Rats made a nest where we stored food trays. I went to clear it out (since I was one of the only ones not afraid of rats) and the manager told me to leave it alone because the rats would just make a new one anyway. I've literally never worked in a clean restaurant/bar and I can promise I've worked at places you've eaten at.

that is so foul. i watch the twin home experts here on you tube and they specialize in pest removal (mostly rats) and it’s insane- because majority of the houses they go into are extremely clean and well taken care of. once there is a point of entry and they have a food source, you’re basically fucked because they can chew through just about anythingn. i also work in the restaurant industry and although we do not have a rat problem- we do have a manageable mice problem, as well as cockroaches (we have an exterminator come in every week).. but i rarely eat out simply because i do not trust people that are handling and preparing food. people are gross and unfortunately, a lot of people just don’t care. 😭

For the fryer with the bad oil, umm 1 fryer. You could clean that maybe 1-3 times a week, replace the oil depending on how much business they got. At my job we clean all our fryers and transfer the oil over and replace the fry fryer with new oil everyday. Sometimes 2 fryers get new oil depending on how much gets cooked
