Joel, love ur recipes greatly. I am a chef and your recipes are "on" every time. Have to say, love your dog so very much. Collies have such a sympethetic look in their eyes and even as they remain still, have a swagger of calmness, obedience and pure love but also with a "seeping" excitement that knows their obedience shall be rewarded, same befitting of Saints. I boil the kettle and pour boiling water on it (in the sink), then a quick wipe with vinegar. I also coat it in olive oil regularly. Plastic or nylon cutting boards should be banned in my books.

Been following you for quite some time and I love the dishes you do. At three minutes are your rings chewy ? Seems like when I fry mine after cutting them that thin they are like rubber bands. I know that people are overly cautious today about under cooked foods and maybe that is why you suggest three minutes. Thoughts ? -- Thanks, Dennis

A lot depends on your fishmonger, but a quick tip, marinate them in some fresh kiwi juice, they will tenderize.
