Loved hearing the laughter in your voice. You must be feeling better. I'm impressed with the complexity of your quick spaghetti sauce. The only things I might add are a bit of pesto, pepperoni, and crumbled bacon to chef it up a bit more. I do use carrot but never thought to cook and mash it. I'll try that in future.

Victimized by the broiler! That is me! I have literally taken things out of the broiler on fire, it is a family joke now 🙄😂 last night I put bread under the broiler and got a phone call - burnt! I have never heard of mock pineapple.... I'm not a fan of pineapple, but my youngest daughter is, and her garden was very prolific with zucchini this last year, I will share this idea with her, as she lives canning new things too! I made pretzel buns this week instead of just making rolls , or bread and my husband loved them, I also made meringue cookies with some leftover egg whites, those were also very well received, especially from my gluten free friends. I think my favorite way to use stuff up is a “leftovers” omelet. Spaghetti noodles, rice, potatoes, veges…whatever I have is sautéed up and used as omelet filling, along with garlic powder and cheese. I often top it with any kind of sauce that seems right, from pizza sauce to gravy to honey mustard. Somehow it just always seems to turn out delicious.

Ah, the broiler. lol. Gets the better of me too. I actually have started leaving the oven door open a crack. Not only does it remind me visually that I have something in there but it releases a bit of the heat so it’s a tad more forgiving.

I hope you start feeling better. I'm on a mission to create anything and everything with all the pumpkin and Jerusalem Artichokes we grew this year. My favorite so far is Pumpkin or Butternut squash tortilla's and Jerusalem Artichokes and Black Bean Burgers on homemade English Muffins with a bit of mayo and hot sauce. I love pantry challenges as it creates some awesome meals and lets you use your pantry without grocery shopping

Hope you are feeling better! Could you maybe address in a video what you eat when you are fixing something else for the family? I'm not doing a full elimination diet, but I am removing things from my diet for a time to see what, if any, difference it makes. I've learned nightshades are not my friends, but I also learned that I can handle gluten when it is part of a whole grain recipe (finally feel like I have mastered baking with fresh milled flour). That said, there are nights when my family wants fast food but I don't, so I would love some single serving dinner ideas that are healthy. I can't remember, are you doing carnivore? I think I have convinced the family to try carnivore, but I need to give it a go soon... before we start bringing in a harvest of temptations from the garden! And I just ordered restaurant organizers for our commercial freezer, so this weekend I am pulling *everything* out, getting a properly inventory list, and hopefully getting a carnivore meal plan together if I think we're stocked up enough for it. The original goal was to organize it and make room to order a quarter or half a cow but I'm not sure there is room. Take good care of yourself girl! I know with your personality you are not likely to give yourself a break while feeling crummy, especially during the pantry challenge and raising little ones. But I hope you are finding ways to rest and recover, and getting help to keep all the balls in the air.

New sub here. ❤ I’m doing the pantry challenge too, for the first time this year! We haven’t done anything unique yet but smoked a bunch of bbq and that cleared out some space in our freezer. Tonight I made beef ramen noodles for the first time. It was delicious and I’ll be posting it in my video for next week. I also have a few bags of cranberries I want to use to can cranberry juice. Still working on building up my stock, my husband and I plan on retiring in Alaska some day, hopefully in the next 10-15 years. It so beautiful up there and looks peaceful.
