Immediately made 2 batches of this (note to self... put the blade into the processor before adding ingredients DOH!). 1 - One batch KC Blueberry Pie; one batch Equip Prime Protein (beef protein) Strawberry flavor. For both I used 1 cup CC and a mix of 1/2 water, 1/2 HWC to equal 1/3 cup liquid. Results are pending - I'll leave them overnight. KC was pretty thick immediately, Equip was thick, but pourable. UPDATE: After overnight refrigeration KC version was very thick - not quite NY cheescake but close. Equip version was much more pudding like (no longer pourable). The flavor of both were influenced by their respective protein powders and each had a distinct flavor. Suggestions: if using for a dessert, both would benefit from a bit of additional sweetener. Perhaps the 'protein powder' flavorings would be muted by using more cottage cheese (I used 1 cup).

I used the pumkin caramel, I used the entire small container of cottage cheese, sugar free scrummy syrup, and added pumpkin pie seasoning (measure with your heart?) It was good but toooo sweet and I didn't let it set overnight. Will try with milk next time... with the chocolate maybe add chocolate chips or coconut milk and coconut flakes (mounds?)

Thanks Steve! This recipe idea was just in time for post dental work. I blended 1/2 cup Good Culture full-fat cottage cheese, 1-2 tbs cream cheese and, 4 tbs heavy cream (for a 1:1 fat to protein ratio) with 1/2 scoop of Raspberry Cheesecake Keto Chow for a tasty meal replacement!

Thanks for the cheesecake idea. I'm going to try it. But I know I'm going to want some butter and sweetener on the outside of those tortillas. I wasn't a big fan of Keto Chow when I first tried it. The flavors were bland. A year later I tried it again and I tried putting three or four tiny "teaspoons" of pure organic Monk Fruit powder in each shake and it REALLY amps up the flavor and sweetness! Total game changer for me.

Keto Chow Chocolate Toffee in one batch and another batch with Pecan Sticky Bun 2) How much cottage cheese did you use? 1 cup of cottage cheese 3) Did you use water or milk? 3 ounces heavy cream and 1/3 cup water 4) How'd it turn out for you? The chocolate toffee tastes like the Salted Caramel Cheesecake from the Cheesecake Factory. I topped it with sugar free caramel, sugar free whipped cream, and chopped walnuts for crunch. It was fantastic. Quick and easy to make. The Salted Carmel Cheesecake is my husbands favorite dessert so i'm happy to have a much better for your alternative. The Pecan Sticky Bun is great as well. Sugar Free whipped cream and chopped pecans will take it over the top. First time commenter, but I watch a lot of your video's. Thank you for posting this. I would of never thought to mix cottage cheese and keto chow together.

Try microwaving a flour tortilla on a paper towel for 1 min (depends on microwave). Mine takes 1 min, 9 sec to make a crispy crunchy tortilla perfection! I use them for sweet, and savory food. The paper towel is key. It won't turn out the same on a plate. Then put your ingredients on top. It's truly a delicious crispy vehicle for all kinds of toppings. Try it out! I have a variation of this pretty much every day as my first meal, but I do it "mousse" style. I whip 200ml of 30% heavy whipping cream with a bit of milk powder as stabilizer (4g) and crushed stevia tablets as sweetener (I don't like erytrithol so this is the next - and only - best thing where I live). Then I add 3 tubs of quark (3x250g), since I want more protein than fat, I use lactose free quark that's low in fat, it has a bit more carbs but less calories and more protein (the brand is Gutes Land, probably specific to Germany). I whip it all up, sometimes add a bit of vanilla extract or vanilla bean. I spoon most of it equally into 5 mugs. To the rest, I add cocoa powder (8g or so) and around 40-50g of protein powder (I'm trying to use up my Matrix Syntrax banana and cream protein and WPC80 whey in caramel coffee flavor). Whip it up again and again top up the mugs equally. This way I have breakfast for the next 5 days, each portion around 190g has around 260 calories, 28g protein, 8g carbs, 12g fat. I like the double-layer style, to me it somehow tastes better. I also used to use higher fat quark but the caloric difference is significant and I eat around 1600kcal a day so 400kcal on the breakfast mousse meant I had to make concessions later in the day. It also works great with added cream cheese or mascarpone, but again ups the calories. I will try adding the cottage cheese! I can always use more protein 😄

Hey Steve... I used Keto Chow Pistachio yesterday to make this recipe. Used 1 cup Daisy cottage cheese, water, and added a bit of monk fruit to offset the stevia taste. I'm enjoying it today and it's very good! I'll try this with other flavors for sure!

I'll let you know the final result, but I tried this out using Raspberry KC, 1c Kroger generic large curd whole CC, 1/2 HWC and half water. Used a 1/4c disher to put it into silicon cupcake molds that I had baked with a 'graham cracker' crust I made with home-made nut meal (blend of pecan, almond, hazel, brazil and macadamia), allulose, cinnamon and butter. They're in the freezer now to finish up setting and getting ready to come out of the mold.

I agree with the "Keto Chow distinctive taste." It's different, can't really put my finger on it, and sometimes I like it more than other times. I do find this pudding/cheesecake interesting....but the tortillas are the slippery slope for me, so I won't be using those, but I'll likely try the pudding soon!

On a whim, I mixed vanilla whey protein powder with plain Greek yogurt and it tasted just like creamy cheesecake filling. A better cook than myself could probably make a crust out of crushed walnuts, butter, and almond flour.

I made this with Keto Chow Punpkin Spice Caramel. I was a little short on sour cream, so subbed the balance 2 TBS of ricotta cheese to make up the difference. The texture is creamy cheesecake-like. The pumpkin flavor is there, but not strong. There is a slight perfume-ish aftertaste, but I've got very sensitive taste buds. It's a very good Keto recipe to fill that dessert craving. The protein content is a plus.

Since cottage cheese is having a moment on your channel, I thought I would tell you about the Ninja Creami ice cream I've been making lately. It's not quite keto but it's low carb. 200g cottage cheese, 200g frozen fruit (blueberries, strawberries, peach, or mango), 3 packets Truvia, 1 Tbsp allulose, 1/4 tsp salt, 1 tsp vanilla or 1/2 tsp pumpkin spice (for a cobbler flavor). Stir together and level off in a Creami container, freeze overnight and spin twice on lite ice cream, one respin. It really helps to run hot water over the sides before spinning. The fruit flavor is very intense, and if course it's more natural than the Keto Chow ice cream I used to make everyday. (I still make KC ice cream for non‐fruit flavors.) As long I'm allowing myself about 50 carbs in a day, it's the perfect ice cream.

I'm going to divide this into 2 servings instead of 3 and have one as a meal. My typical day is protein shake mixed with coffee when I get home from the gym and a meal later. But protein coffee pudding sounds pretty good too and will be even more filling with the cottage cheese added. I'm thinking Equip salted caramel and cold brew to replace the milk/water.

The next time I think I’m gonna liquefy my cottage cheese first cause the keto chow thicken it up right away and I had to add more liquid, but other than that, it was amazing.

If dairy free, could always make usig Maria Emmerich PSMF Pudding w/egg whites and Equip Protein Powder. I'll give it a try and report back. 🙂 She also has a cream cheese recipe in one ofher books that uses egg whites and a cream cheese extract that might be worth a try. Adding a tsp of gelatin to the recipe also gives it more of a mousse like texture.

I make all sorts of proportions of So delicious coconut milk beverage, heavy cream and cottage/cream cheese stuff adding up to 1 1/2c with protein powder. As you found the more cottage cheese and the drier that is (you can pour off more liquid if its been in the fridge a long time), the thicker. I also use my own reverse-engineered "keto chow" because I unfortunately do not like the vitamin and mineral flavors in it. Its really a shame since the other ingredients are top shelf like milk protein (80% whey/20% casein), acacia fiber, now flavors carried by the acacia fiber so no maltodextrin. Heck, even the vitamins are the best ones for absorption esp. methylfolate and methylcobalamin. So 40 grams unflavored whey protein isolate (scoop and a half), 1 tbsp acacia fiber, 2 tbsp powdered erythritol plus sucralose drops to taste, 1/4 tsp salt, 1/4 tsp guar gum then whatever extract flavor and spices, though I skip the fiber making chocolate since cocoa powder has its own fiber. Thinner mixes with 1/2 to 1 cup cottage cheese (even those with no cottage cheese) work great in the NInja Creami, thicker mixes set up well as puddings, more mousse-like with heavy cream if whipped enough to take on air. Of course, a touch of xanthum gum can make anything a little thicker, just as it does in keto chow. I just play with whatever I have that's approaching its 'best by' date first. Around a 1/2c you lose the cheese taste and just keep a little tang, so your 1 c was probably the perfect amount!

I have never used Keto Chow, but I have made protein “pudding” with silken tofu (and I normally don’t like soy anything) mixed with protein powder, a little cream cheese, and thin it with heavy cream…. Mix in food processor, just as you did, and refrigerate, either in individual servings, or as a filling, like a French Silk Pie. No one can tell the difference. I think the little bit of cream cheese makes a difference. Also, seems to me that the silken tofu has a better texture than cottage cheese. I haven’t made it in a while, so maybe I’ll try the cottage cheese and see if it’s better than the tofu version.

If you want to make a cheese cake, try grinding up 2 cups of almonds to almost but not quite a powder. Mix with 5 Tbl melted butter and press into a parchment lined spring form pan. I got this from Twin Cities Adventure, the Keto Instantpot New York Cheesecake recipe. You will probably have to adjust the quantities of the filling but This cheesecake was delicious

Just a thought- perhaps you could do an egg wash on the inside of the taco shell and heat it for 15 to 30 seconds before putting in the filling. Perhaps that would give you the texture you were looking for?

I'm sure the cottage cheese has a little to do with it. It's likely the combination of the cottage cheese with the minerals in the Keto Chow. I find that taste tends to dissipate as Keto Chow sits in the fridge for a day or two.

The cheesecake: You can add a little Goodman's raspberry flavoring. I always add 1 tsp of monk fruit to my Keto Chow. To make Keto milk, I'd add 1 or 2 Tbsps of HWC to that 1/3 cup of water, stir it up and see if it's the consistency of milk; if not, I'd add more HWC, then add a little vanilla and monk fruit until it tastes like milk.

I make a similar cheesecake: 1 c Good Culture Cottage Cheese 34g Bare Performance Nutrition Whey 2 tbsp allulose 2 eggs Blend aggressively. Split between 2-4 ramekins (or just one, let’s be real) cover tightly w foil Instant pot- High/Sealing 9 minutes + 15 minutes before manual releasing (leave in for 15 even if the little dot drops on its own) Remove foil and chill in the fridge. Re-cover after they are cold if you don’t eat them immediately. Enjoy!

If you make the cottage cheese with a lemon flavoured protein powder and add an egg, then bake, you'd get much closer to a New York style cheesecake. Or you can use a caramel flavour, with the salt already in it, you'd get a salted caramel flavour.

If I need dessert, I just make crustless cheesecake. Just swap the sugar with allulose. Add some raspberries or other berries if you want

Sounds like a great idea.. i was looking into keto chow sweet flavors and they all appear to have sucralose in them. Wish they would use something else :(

I wonder if you'd get more sweetness and less saltiness if you used a no-salt-added cottage cheese. I accidentally got that one time and it's terrible for eating, but it might be good in recipes.

Yeah, some cottage cheese can be pretty salty. That combined with the salt/minerals in Keto Chow can get pretty salty. I wonder if a few drops of liquid stevia would counter that.

I miss warm pudding. Jello came out with instant pudding and the whole industry moved on. I don't even know where to get the mixes from anymore. Cook it in a pot type.

betty crocker cookbooks still have reciprs like that and you can adapt some to be keto by swapping out flours and sweeteners. we used to make "sos" and it was cocoa flour sugar amd water or milk and once done we added butter and that made it so creamy. you could sub the flour with the vkk 2.0 likely and try it.

I have a question regarding using a protein powder. How much did you use in a cup of cottage cheese? Just one serving or more? I want to try this with Isopure zero carb. Fantastic recipe idea. Can’t wait to try this.

@@jimw744 I used 1 "serving" of protein regardless of the amount of cottage cheese. Looking at various tubs and packets of various protein powders, a serving seems to be 41g to 47g.

I specifically state that Keto Chow is not required. You can use any protein powder you like.
