Something I should have addressed in the video is using chicken that isn't canned. You can absolutely do that - I'd recommend either breast meat or a combination of breast and thigh. I should be cooked though, and for that, I recommend a "moist" cooking method: sous vide, pressure cooking, steaming or poaching. This will ensure that your nuggets aren't dry. The amount to use would be the same as the drained weight of the canned chicken - 7oz or roughly 200g.

LOL I was scrolling to ask this question also. I have used home made pork panko ( food process pork rinds) in a lot of things. I find that the pork panko can get hard and very crunchy when used as a breading. It also creates a different chew and mouth feel almost like to thick and more effort to swallow. I mean we still use it but its a work in progress. It does make an excellent substitute for bread crumbs when making meatloaf! ! ! !

I used steamed chicken breast...a bit dry may have to add more mayonnaise. Otherwise they were good.

12 nuggets Breading 1/8 cup pork rinds 1/4 cup shredded sharp white cheddar Nuggets 1/2 cup shredded mozzarella 12.5 oz canned chicken breast 1 large egg 1 tbsp mayonnaise 1/4 tsp seasoning of choice 1. Preheat oven to 425F 2. Combine pork rinds and sharp cheddar in a food processer, pulse 10-12 times. Place in a separate bowl and set aside 3. Drain the canned chicken 4. Add chicken to food processor. Add shredded mozzarella, egg, mayonnaise, and seasoning 5. Process for 10 seconds, then scrape down the sides and process an additional 5 seconds. Do not overprocess the chicken and turn it into paste 6. Spray baking sheet with non-stick cooking spray 7. Scoop out chicken into the breading and shape into nuggets 8. Bake for 9-10 mins. Flip. Then bake for another 8-10 mins

This is Great! In the past week I saw a news item about a recall on Dino nuggets, and I mentioned to my wife that those "things" were not fit for human consumption even when not under recall. Then my wife and I talked about how often we fed our children Dino nuggets as they were growing up. Makes me sad and 🤢 to think about! Now these nuggets from Serious Keto on the other hand! They are Scrumptious, Delicious and something you'll never have to be ashamed to have fed your children, or eaten yourself. Thanks Steve!

I've made a recipe like this a few times in the past and I agree that the canned chicken is salty. So I started cooking my own chicken an put it in the food processor and form my patties. Also VERY good and a lot less sodium. I use this same breading to make chicken fingers with chicken breasts. I also add parmesan, garlic powder, salt & pepper to my breading for those and make 3 pounds at a time to have them ready in the freezer for quick pops into the air fryer. Thanks for a great recipe!

I have a grinding attachment for my kitchenaid and I've made some great chicken patties without all that salt, but canned chicken would be great in a pinch...just got to figure out if I can rinse that salty taste out or mask it with something

I'm so jazzed over this recipe. My non keto grandkids (all teens) will have no problem scarfing these down and these are way healthier than any frozen nuggets in the grocery store. I'll probably triple the recipe and serve some hot and fresh for dinner and then either refrigerate or freeze the rest for them to pop in the air fryer. Thanks!

Love this! I have seen so many recipes on facebook for chicken nuggets and the amounts are all over the place. I always have some Kirkland canned chicken on the shelf for a quick meal now and then. I also can my own chicken so that would work too. Thanks for all your experimentation!

2:20 I'm thinking about this calendar my county government put out years ago about not draining your canned fruit "juice" (which is in reality just sugar water) into your kitchen sink and water system, which the municipality then had to deal with. Ever since then I drain and strain as much as I can into a plastic produce bag that then goes in the trash / landfill, as opposed to the water system. And as a plumber (not by trade but by necessity) I've installed many sinks, faucets, drain pipes, and remodels, and seen many pipes (especially kitchen pipes) that are nearly clogged with this gray - blackish sludge, GROSS! I recommend folks use an enzyme in your drains to eat as much of that "stuff" as possible, and do everything you possibly can to Not put anything down the drain. OK, I'll climb down from my soap box. Steve, made you nuggets for lunch today. They were very tasty. A way to used up any leftover coating is to put it in a nonstick pan and make Frico. After all it’s just pork crumbs and cheese. The Frico can be made in the microwave too.

I made these for my keto dinner tonight. The seasonings I used were: 1/4 teaspoon each of garlic powder, onion powder and SMOKED paprika. They turned out SO GOOD! And I don't even normally like the taste of pork panko. (I used Porq brand panko, by the way. They have smoke flavor added.) The sauce I used was G. Hughes hickory barbecue sugar free sauce. I can finally have chicken nuggets like my kids!

I found a recipe for fried pickles that called for a bit of egg white powder mixed into my breading. It was great. Plus you add more protein.

I've found that when doing a 3 stage dredge, using whey protein or egg white powder for stage 1 helps create a really crispy end product (and helps the beaten egg from stage 2 adhere better).
