In Malaysia A1 meehoon has the best texture. Soak in tap water for 10 mins n drain. Traditional way of frying meehoon is to use a pair of wooden chopsticks to toss. This prevents the meehoon from breaking up as a rule from my late mother.

U need more oil to fry meehoon not mee which is oily in texture if u are using the fresh yellow mee.
