Looks like a nice setup for good kitchen knives (used to be a professional chef). Not sure if it would be as good for fixed blade knives as many have different angles and/or hollow ground.

Do magnets stick to real stainless steel? No iron in pure stainless steel?

There are many grades of inox, some are magnetic some aren't. And ofc they are based on iron

How do you think it would work on my Bench Made pocket knife?

This is probably best for fixed blades longer than 4". You could probably sharpen a folding knife, but it needs to be on the larger side. We sharpened a few of ours, but again, it's best for larger knives. Thanks for watching.

What specific issues do you have with them? Have you used the HORL? We just taught a group of six 14-16 year-olds how to sharpen a knife with the HORL. All of them put a very nice edge on the knives. I'm just curious what you feel is disappointing about the HORL?

The best I’ve seen is the HONE Knife Sharpener. Horl didnt invent this, do more research.
