I have a confession to make.. I knew the answer before I asked. Bob Hatting said the exact same thing to me back in 2002 when I almost bought what was left of Western Cutlery from him. He told me then that the U.S. Cutlery Market was dead. At the time it just didn't know it yet.. (which is why I backed off the sale) I used to make a lot of knives and sell a lot of knives. That was before Pakistan, China & India invaded the U.S. Knife Market. Just another American Industry killed by that thing we call Free Trade.

What v sharpener does he drag the dull knife across to get the bevel back?

Well darn, that edge is going to need reprofiled. That's going to take a good chunk of time. A. G. : yeah... 10 seconds with a V sharpener. Crap. I'm no good at sharpening. I will say though that I've never liked v sharpeners as they take off too much metal and never get a good edge. However i think AG just showed me how a novice can reprofile a bevel quickly.

Yah I also dislike the v sharpner however when a blade is in very bad shape I rather use that a few times than hone it with ceramic or strop it. Later after some use take it to whetstones or diamond plate depending on what I'm using a knife for. 20 degree is not bad for knives and to me it is easier to lower the angle after the knife isn't in poor condition.
