In Australia, at Chinese restaurants (usually Cantonese), I’ve noticed the fish is slightly undercooked when removed from the steamer and the oil, lard and reduced soy are used (over ginger and scallions) to finish the cooking. It’s usually allowed to rest for just 1-2 mins, then dig in!

Sifu Wang, "slimed" means the fish would be gelatinous and not nice, you mean it's "Slimmed" as in "less fats" which makes sense because the carp fats are where the bad taste lives. Slim fish is something I want to try now also. Thank you for the great video.

Does "Slimed Fish" mean "Slimmed" fish? As in, the fish has not been fed or been put on reduced diet to lose its fat content? Does this improve the taste of the fish? I hope Chef Wang can help answer. Thank you.

Lose fat content is a part, fishes grow in river or lake often taste "soil" smell (idk how to say it in english), so they keep the fish in clean spring water and "slim" them to get rid of the smell. That`s why these fishes taste better than the wild one.
