Looks good, will definitely try this. My mom made shipwreck stew regularly back in the 70s. The recipe was in all those community/church cookbooks. The version we all made had hamburger, canned tomatoes, kidney beans, and rice.

I made this for dinner tonight. It was quite the hit. I didn't have the "frozen fajita vegetables" on hand so I just added a can of "fiesta corn" (drained) and we all loved it. Simple, easy and quick. Thank you!

I haven’t made my ship wrecked casserole since my kids were little But here is the recipe. 2 lbs. ground beef 1/2 tsp salt 1/4 tsp pepper 8 potatoes sliced thin 1 can pork n beans(van camps are my favorite 1onion chopped 1can tomato soup Brown ground beef and onion Drain And salt and pepper And tomato soup. Layer potatoes then beans, top with meat/soup mixture. Cover Bake 350 2 hrs or until potatoes are done. I liked to uncover and top with cheese. Return to oven until cheese is melted.

Catherine, I finally bought the meat chopper, you feature, and it’s awesome. I can even shred chicken, cooked in my Instant Pot. I had a different chopper, but it didn’t work as well, and the handle, melted after I rested it on the edge of my pan.

Made this and it was great. The modifications I made: I used a can of diced plain tomatoes (not the Rotel), I added a can of Del Monte Fiesta Corn (which has some "mexican" flavoring in it)(There is a Del Monte Southwest Corn that is the same as the Fiesta but with poblano peppers added if you want heat), fresh precut fajita veggies from the produce dept. (green, red, orange and yellow pepper slices and white onion slices). I think the extra water with the Fiesta Corn did the trick, I didn't have to add any water and the pasta cooked up fine.

I like to make my shipwreck casserole in the crockpot. Onions on the bottom. I slice them. Then 2 veggies, like French beans and baby carrots, ground beef crumbled. 1 cup uncooked rice sprinkled over. A packet onion soup mix sprinkled over. Then a can of tomato soup. Cook on low for 6 hours.
