I've been making these for some time, but put together a little differently. I put some veggies and/or meat in the muffin cups (about quarter to half full) then pour on beaten eggs and top with some cheese. Either way, it comes out nice and is so delicious.

i made these yesterday as im trying to eat healthier and lose some weight and these looked good and much healthier than poptarts. i have to say I'm amazed! it taste like an omlet and they are filling as hell! i heated 2 up thinking id eat both and ended up only being able to eat 1 1/2. i also learned the difference between a head of garlic and a clove (i dont cook very often) right before i out 2 heads of garlic in instead of 2 cloves... that would have been terrible haha. good recipe ill definitely be looking at your others!

+claieta Thanks! They absolutely can be reheated during the week. We usually make them Sunday and then just reheat them in the microwave in the mornings. You can add cheese or any other mixins you want, just keep in mind that will affect the calorie count. Good luck!

Hi, do you have any tips as to making the healthy egg cups not be soggy? I realise when I make mine that they become soggy after re-heating. Do you have techniques? I think the sogginess comes naturally from the juices of the vege, is there a way to prevent this? Thank you.

Hi there! You could drain the veggies before mixing them into the egg mixture and baking. You could also blot the egg muffins after you've reheated them with a paper towel to soak up the juices. Hope that helps! :)

They should! If you can't keep them in the fridge, keep them in a cooler until you hit your destination! :) Then heat them up and serve!

These make a good food item for traveling. I put them in a covered bowl and keep in a cooler. When we're not able to warm them up, we eat them cold......and they are still delicious. They last easily a few days as long as they're fresh to start with.
