Yummy! Creamy grits with fresh shrimp! This is a common dish you will find in many restaurants across the Southeastern USA. I like my sauce a little smokey with some heat, but there are many variations of this popular southern dish. I hope you can give it a try!

Here are the ingredients for 2 servings:
Rainbow Gardens Shrimp and Grits
For the Grits:
1/3 Cup Grits
Salt to Taste
1/2 Cup Seasoned Ham Stock or Chicken Stock
1/2 Cup Whole Milk
Or substitute a little grated cheddar cheese instead of milk & stock but add it at the end of cooking.
Shrimp and Sauce
1 Slice of Smoked Bacon and Grease
1/2 to 3/4 Pound Peeled and Deveined Shrimp
1 Cup Whole Milk
1 Clove of Garlic, Grated
1 Tablespoon Unsalted Butter
1 Tablespoon All Purpose Flour
Salt to Taste
1 Heaping Tablespoon Rainbow Grilled Peppers (in video)
OR Substitute Roasted Red Peppers, 1/4 Teaspoon Smoked Paprika, and Pinch Cayenne Pepper to taste
1 Teaspoon Fresh Chopped Herbs Like Chervil or Parsley, a little green onion or chives

Y'all need to try this. I prefer yellow grits over the white and you can eat the grits with other stuff. You can use chicken stock and milk for your liquid. Google Zea's roasted corn grits, Lafayette Louisiana. You'll love it.

Just made this. It was very GOOD. My husband never likes this type of dish. He Loved it. I used ground sausage instead of bacon, and added parmigiana cheese. I used the long cook grits, about 2 hours. It truly was the best shrimp and grits I've ever had. Thank you so much for this recipe.

man this brings me back to my childhood. Me and my older brother would wake up early and make a huge bowl of grits and share it together. I'm going to have to make this with him the next time I'm able to visit home.

If you want to intensify the shrimp flavor, take the shrimp shells and simmer them in the stock of choice for an hour. Remove the shells and reduce it a bit. Then use as normal. Liquid gold!!!

I've been looking for a slightly different version of the popular shrimp and grits meal and yours by far is the best one I've come across. I just want something light to eat for breakfast. I know many may think this is heavy lol, but your recipe seems very settled and not overbearing. Overbearing or not though, it looks delicious! I have saved this recipe of yours. Thank you so kindly for showing us your version. This is a new one I've come across being from southeast Louisiana. I can't wait to try it next week for breakfast. I am a new subscriber because of this recipe, but also because of your delivery of it! YOU ARE SO DELIGHTFUL! I grew up in the Smokies outside of Asheville, NC (so more Appalachian than actual "southern" I suppose) but shrimp and grits has been one of my favorite dishes for years. I have tried the dish everywhere I can, I have made quite a few different variations successfully as well, but this one is the Gold Standard! Your presentation is great, your voice is like the silk on a belle's parasol, and your homepage is also fantastic! I am never compelled to write this sort of thing, but I just HAD to drop in and thank you! I can't wait to try other recipes!

I followed this recipe, and it was out of this world delicious. Though, it was the first time I've had shrimp and grits, so I've got no point of reference. Modifications I used were coconut milk and heavy cream/cuz that's all I had in my house. And I used pepper jack cheese and red pepper flakes.

VivianRinSC Well hi there! I have not heard form you in a while. :) I hope you can try it this way. I like it both ways but there is something about the sauce with the smoky peppers (almost like a spicy gravy! ). I ate it with a sauce at a restaurant one time and this is how I have made it since. :)

😍Thank you for this video!! You have inspired me to try this!!! I have had shrimp & grits once.. I did not think I would like it… But I was never more wrong… I absolutely 💕loved 💗it!!! But don’t have any experience with cooking with Shrimp... so this may seem like a silly question 🧐but -will the frozen shrimp work ..does it matter if it’s pre-cooked shrimp that’s been frozen?

OMG! You call burners "eyes". So do we (my family and I). We thought we were the only ones! We are originally from Copperhill, TN, but have lived in Atlanta for almost all of my 54 years. People always look cock-eyed at us when we say it. i.e. "I'm sorry, did you just call a burner, an eye?" LOL! By the way the shrimp and grits look amazing. I will try to make them.

5:15 "...less of a shrimp flavor..." What are you thinking? What's the point of making shrimp and grits if the shrimp isn't the hero? I would make my stock from pan-roasted shrimp shells and white wine. Brown the shells in a medium-hot pan in a bit of olive oil, add 3/4 cup of dry white wine, reduce heat, simmer and stir for about five minutes and strain the stock, pressing the shells to be sure to get all the goodness. Don't simmer past five minutes or the shrimp flavor begins to lose its freshness. Up the bacon flavor with another strip or two, or some additional bacon drippings. Every southern cook has a jar of bacon drippings. And NEVER cook the shrimp separately. Makes them tough.

If there was anything I would liken it to would be creamy polenta. Oatmeal is a lot more mushy than grits are.

No... grits does not taste like Oatmeal... the best way I can describe grits is like a corny flavored rice like porridge. It has it's own unique flavor..it pairs well with stews and meats you'd eat over rice etc

@@RainbowGardens I didn't mean you, That was Joe Pesci from my Cousin Vinny. 😆 In that scene he's cross examining a witness that he knows doesn't know what he's talking about and the man mentions he was making his breakfast so Joe Pesci asks what it was and he says Grits was part of it, then Joe Pesci curiously asks how long it took to make it at which the bozo says 5 minutes, he then asks if it was instant Grits to which the man replies "NO SIR, no self respecting Southerner would eat instant Grits"! Joe Pesci in this movie knew that Grits take 20 minutes so instantly he's all over him. Look up My Cousin Vinny, instant Grits, it's hilarious.

@@RainbowGardens I make grits for breakfast every Saturday, I'm an aspiring Chef, eggs, corned beef hash and grits every Saturday morning, every time I think of grits I think of that scene. "Were these magic grits, I mean, did you get your grits from the same guy that sold Jack his BEANSTALK BEANS"?! I lost it there when he said that.

I reside in the south and I still can't wrap my head around this dish. I love grits, but not shrimp. I just don't get the combination.

+GREEK HUMMUS Awe. Perhaps you can try it with something else other than grits? Country ham, sweet and hot peppers? I love shrimp and always find a reason to use it. :) It is a very popular dish in the southeast too.

I reside in Charleston, SC, and while a good majority of my friends, coworkers, and acquaintances love this dish, I on the other hand find this dish to be absolutely odd. I need to research the history of this dish, and how it came to be. Like who decided that shrimp and grits was a good combo? Segue to gumbo: I totally get gumbo. Now that makes sense, or at least it makes sense to me. Boiled peanuts is another oddity. Like why would anyone do that? Also fish and grits? I don't get it. ( ^ _ ^ )

GREEK HUMMUS Good question! I am merely speculating, but if you start by researching the origin of grits, it may point you in the right direction. There was a time in history when people, especially in the poor states of southeast, would eat mostly a corn based diet but this led to a niacin deficiency called pellagra. There is a process, called nixtamalization which makes niacin more available from corn - the result? Grits! Perhaps these dishes, shrimp, fish, etc. were once eaten mostly with corn but due to the pellagra endemic, people began eating them with grits. :) Sound good?

Your explanation makes sense actually: Affordability, availability and convenience. To be completely honest I'm a finicky eater, plus I don't eat meat, but for health reasons. I'm not into the whole PETA political mumbo jumbo anti-meat thing. On the subject of grits, I am going to try polenta which is the Italian version of cream of wheat and grits? Looks interesting!
